This is absolutely the best place if you’re looking for a quality japanese knife and not something that is just factory made, which most shops or markets sell in Japan. They gladly gave us a tour of the workshop and let us hold the ore used in katana making. It had to have weighed 15lbs and being no bigger than my fist. Mizuno is a 5th generation blacksmith humbly keeping Japanese tradition alive. My next visit to Japan I will definitely be back here to pick up another knife from this family. We stopped by hoping to check out some handmade Japanese knives and ended up getting a personal tour of the workshop by the blacksmith himself. He was incredibly friendly and spoke excellent English, which made the experience even more enjoyable.
The shop has been in the family for five generations, and he showed us everything—from the sword-making area to the bellows he uses for heat treating and tempering. He explained his proprietary process for hardening knives so they stay sharp without becoming brittle—something you won’t find in mass-produced blades.
Each knife is hand-forged using traditional techniques, and you can choose from a variety of handles that he personally attaches in the shop. His craftsmanship and knowledge are truly impressive.
