Evolve Distilling — Local services in Claremont

Visit Evolve! This place is worth a major detour if you are visiting socal, if you are local or near, feel comfortable knowing it's well worth your time.

I was able to try 5 of their options neat and one of their cocktails (modified to fit our allergies, TY Evolve for accomodations and this was shared because this amount would be beyond their limits for one person) and I was extremely impressed with every one.

The Bourbon was unlike any I've had before, and was one of the smoothest drinking 100 proofs I've ever had. I would say it was very, very mild in flavor, highlighting the classic notes of oak, but I've never had such a light Bourbon that had no harshness or detectable off flavors; I think if they are ever able to release an older age, it'll be one of the best bourbons in the world. I feel like my nose is turning brown writing this, but swear this review is natural.

The Caribbean Dark Rum is a star! Completely delivered on esters while also not crossing into offensive for the unfamiliar ; I think it's a great introduction into a funky rum, while also being very sophisticated for those familiar with the style.

I tried their one of their riffs on lemoncello, that was actually an orangecello, and it smelled of fresh ripe oranges just peeled and made a wonderful, dessert nightcap.

I was also able to try some Rye options, and they were very much in line with the others.

For all of the options, the main draws to each of the different styles were not just present, but highlighted, AND the finishes were light, clean, and without off flavors.

They distill all their spirits and have multiple award winning liquors like their dark rum, Persephone Rye Whiskey, and coffee liqueur. Live music on most Thursdays and you can also inquire to rent out the space for a private event. Their craft cocktails are super creative and you can do liquor flights. Stopped in after Sushi from 'Rolling Sushi' at Claremont Craft Ales. "Love Rolling Sushi!" Evolve is across the parking lot from CCA. Much better than I imagined, a real cocktail lounge and great bar and bartenders. I had an incredible whiskey sour with their award winning rye. I am sure I will be back to try...
