This Carniceria was a pleasant surprise in the small town of Hudson. If you are not watching you could pass right by it. They have a limited, but decent menu, smothered burritos, tacos, breakfast items, menudo, etc. (See photos). There is no inside dining or really any place to stand while waiting for your food as the store is cramped. So why did I rate it 5 stars? Well, the food and service. Being a Carniceria all the food is fresh and authentic. The meat in your burrito, taco, etc. comes straight from their meat display. So your beef and bean burrito is Carne Asada meat not ground beef. The Adobado was nicely seasoned and cooked with a nice hint of char and caramelization. The chicken tacos were quality built with chopped chicken, not ground, double corn tortillas, all the toppings, and a small side of green salsa. The green chili was acceptable which says a lot as I am partial to my wife's green chili so I believe their green chili will be acceptable to most people. The service was great. They had a lunch rush as we got their, but they greated us promptly, took our order promptly, didn't act rushed or overwhelmed, smiled at us, were thankful for our business, and most importantly took care preparing our order and getting our order correct. I will be happy to visit Carniceria La Mexicana again for a meal and probably take home some fresh meat...
   Read moreSo I'm not gonna lie. My kids go to Hudson school and I drive by that carnicera and didn't think much of it. I mean it's Hudson Small Town not much so I never gave it a thought. So today decided to just give it a try. It's very modest yet offers up a wide variety of products. I stopped there to get some fajita meat for tonight's diner. Prices are pretty decent and they're very welcoming in there. Now I wouldn't write that much more about it except they do serve cooked meals. And let me tell you I was surprised to find out they sold Barbacoa there. The man was so confident about his product he went to the back and brought In a sample some of that Barbacoa and soon as that goodness touches my tongue I knew I wanted more. Took a whole pound of it. And let me tell you he says they cook it for 10 to 11 hours and they steam it first. No wonder it was so tender and hardly any fat. Now this is my new spot. He did tell me I've got to try their burgers too which I will next time. Cooked some of that fajita beef and the meat quality is leagues above anything around the Brighton and fort Lupton area.
