Sourdough tamal paired with golden mole—layered, aromatic, and texturally brilliant. 🍰 Desserts (foie gras ice cream + chocolate semifreddo) – Not heavy at all, and the most impressive part of the meal! 🍨 Foie gras ice cream – Savory with a tequila twist, so unique. 🍫 Chocolate semifreddo with peanut mole – Unforgettable pairing! Smooth chocolate balanced with bitter notes, perfectly cutting the sweetness. 🐇 Rabbit (Conejo, mole verde) – Meat was dry, seasoning felt off. Didn’t meet expectations. 🐗 Texas Wild Boar Pork Chop (Jabalí, mole poblano) – Tough texture, strong gamey flavor, not elevated by the mole… honestly hard to finish 😅 🎉 Final Thoughts Topolobampo offers a wide variety of moles—complex, creative, and full of ceremony. Even with two disappointing mains, everything from starters to desserts was solid.
