Nova — Restaurant in Sint-Niklaas

Nova recently moved to a small venue in Collegestraat, offering its wonderful dishes in an open kitchen concept where you can sit at the kitchen counter, allowing for interaction with the chef and sous-chefs. There are also some tables in the back. While I had reserved a table, we were seated at the kitchen in higher stools. So call to make sure of your reservation rather than just using the online reservation app. You are asked to pay a 50 euro deposit upon reservation, although the system is not compulsory. The food is absolutely wonderful. I was there for the carte blanche lunch, meaning that the chef serves 10 dishes of the season, based upon local fresh produce. There is a mixture of great tasting vegetable, and especially fis h dishes. I was not fond of the pork, though. You can select wine by the glass. The best of the bests! We were blown away for such excellent and unique experience. From the freshness of each ingredient, to the combination between them, the superb wine pairing to the friendly staff explaining everything in English. Vol hoge verwachtingen stapten we het restaurant binnen. We werden vriendelijk onthaald, maar dan lieten ze ons ruim 20min wachten vooraleer we de kaart kregen en een aperitief konden kiezen. De lekkere wijntjes deden de valse start vergeten, en het charcuteriebordje was lekker doch prijzig voor wat je kreeg, en de oesters mochten ietwat kouder geserveerd worden. Voorlopig iedereen nog in goede stemming, en het was uitkijken naar de Franse klassiekers zeker met de lovende recensies, de mooie foto’s en de gezonde portie bluf die doorsijpelde uit de bediening. Ik vond op mijn bord niks van dat terug, geen kunstwerkje, geen verfijnde smaken en geen trots. Ik ben dankbaar voor het fijne gezelschap die avond, om de ontgoocheling in maag en portemonnee...
