Wow! We walked down from our resort, Cahal Pech, and got pulled in by Chef Mo who opened the kitchen for an early dinner just for us.
We were NOT disappointed! We had the ceviche, filet mignon, mayan fish, sweet potato pudding, and infused rum drinks.
The ceviche was so fresh, the chips freshly made. The steak was so tender, the potatoes perfectly blended and the tamarind sauce the right amount of sweetness. The Mayan fish with a vegetable rice pilaf was light and perfectly seasoned. Desert rounded off one of the best meals we've had here.
As for the drinks, we finally found a place that sold a local rum š«¶š¼
It's clear the Chef takes a great amount of pride in his work as he came to discuss his process and passion for his work after the meal.
Not to mention the view is absolutely breathtaking from the patio.

Therefore, we ate 4 breakfasts (including one that they packed to take on our early tour) and 2 dinners. The main "up" for us is that it truly attempts to be farm to fork: the chef provides fresh ingredients from his own farm and a garden on the premises. For example, the fritters and scrambled eggs are made with chaya (the Belize equivalent of spinach) picked fresh from the garden. Everything is made to order (I saw the chef cut a leaf from the garden's banana tree to cook my Mayan fish). The food is excellent and the service personable, prompt and efficient. The dishes have just the right blend of local fare and dishes you could get at home. Conch fritters are a great starter and the Surf and Turf was bangin.
