Cocoblanca is the only sit down dining restaurant at the Coco Beach Resort. Upon walking in, the inside ambiance is stunning. White cloth tables, on multiple floors with several in private nooks. The menu though limited, is adequate for you to have their version of a fine dining experience. I had their shrimp bisque which arrived with pieces of shrimp laid out in the center of the soup plate in linear fashion. The server then pours the thick shrimp broth around the presentation. Temperature was perfect.
For the main, I chose the grilled fish, which came with mashed potatoes and vegetables. Another nicely plated and tasting dish. While I did not order dessert that night, I had their molten lava cake a la mode, at the pool bar the next day. This dessert was exceptional, clearly one of the best that I have had of its kind. I returned on another night for more, but they were out. They suggested their flourless chocolate cake. While it had optics, the cake slice was dry and tasted old. The server did not seem to care that I did not finish the dish and was dissatisfied. I was still charged. The restaurant menu has prices in US dollars and their credit card machine does not work when it rains. So make sure you have cash. I found this line repeated, in some establishments even on a sunny day even though it had rained the day...
