This is the unofficial home to the best poutine in Montreal. I adore this dish, but I cringe at what some restaurants claim is poutine. As fun as it is to modernize certain things or try and turn them "gourmet" a truly great poutine has but three ingredients. But more importantly it's how they are prepared that makes the dish really shine. The fries need to be crisp, but still soft on the inside, and capable of withstanding a dousing of piping hot sauce without being rendered to a mash. The sauce itself needs to be dark, thick and rich. The cheese curds must be squeaky fresh. And proportions are key as well, with cheese and sauce quantities being equally crucial.
