Today we dove headfirst into the local cuisine with our first cassoulet of the trip at Restaurant La Table de Terroir by La Marbrerie. • We are now deep in cassoulet country, and I fully intend to make the most of it! • Lunch was an absolute treat. We started with a locally made terrine served with beautifully pickled vegetables. It was simple, rustic, and full of flavor. • Then came the star of the show: a rich cassoulet made with lamb, duck confit, and locally made sausages, respecting an ancestral recipe from the Minervois region.
