Restaurant La Table de Terroir by La Marbrerie — Restaurant in Carcassonne

Today we dove headfirst into the local cuisine with our first cassoulet of the trip at Restaurant La Table de Terroir by La Marbrerie. • We are now deep in cassoulet country, and I fully intend to make the most of it! • Lunch was an absolute treat. We started with a locally made terrine served with beautifully pickled vegetables. It was simple, rustic, and full of flavor. • Then came the star of the show: a rich cassoulet made with lamb, duck confit, and locally made sausages, respecting an ancestral recipe from the Minervois region. The local crisp white wine paired perfectly with the dish, cutting through the richness making it even better. Here is a proposal for two nice things to do. Do a hike in the hill above the town, with some really nice views of the plain and two gorges, an old marble quarry and a new statue park. Then treat yourself to some nice food here. We went with the menu that provided some excellent choices. Delicious. Inside there are some really big tables for large family get together, you probably need to make reservations for those. Outside there is an enclosed garden with seating. They sell local wine...

What a treat! This restaurant in Caunes Minervois offers not only mouthwatering food but also an enchanting outdoor ambience. Dining al fresco amidst beautiful surroundings was a true pleasure. The flavors of the food were exquisite, and the service was top-notch, with a warm and friendly staff attending to our every need.
