Solidly mediocre lunch spot with fairly high prices and quite an average beach.
We spent a morning / afternoon at the beach, including a long lunch.
First, about their beach. Their sun beds are EUR 150 a day, and can comfortably accommodate 2 people. We had 3 in a row, with a group of around 6-7 (some coming and going). I would say the beds and towels are a bit tired. Our hotel (located in the town of Saint Tropez) has much newer and fresher towels.
Service at the beach was good when the beach was half empty, but can fall behind when it gets busy. Occasionally, had to remind the waiters for things we asked for (mostly water).
The part of the shore, around 1-2 meters adjacent to the water, is full of dry seaweed. While it does not smell, it is uncomfortable to walk into water. There is seaweed around 5 meters into water, and then water gets better. If 10 is the best beach you have been to, and 1 is the worst, this beach is around 3-4. If you move a bit right (facing the sea), which would be south-west, there is a public section that does not have the dried seaweed.
I believe there were some scenes from the Gendarmerie series filmed not too far off, and the popularity of the beach could be traced to that.
In terms of enjoying the sea, the water was not warm yet, nor is it that comfortable. I dipped into the water, but it only lasted 5 minutes. IMO, there are better beaches in the Saint Tropez peninsula (for example, L'escalet).
Next, to the food. The restaurant menu is good and inviting. There is a full page of very yummy appetizers. For main dishes, there is fish (catch of the day), shell fish, and a variety of land animals such as chicken, beef, etc.
For appetizers, we opted for the shell fish carpaccio with caviar, the mezze plate (hummus, eggplant caviar, and one more), and the sea bass crudo. The appetizers were great, and fantastic to share. They even satisfied our request to bring some fresh veggies to go with the mezze (in addition to bread). I would say, the starters were excellent.
We got a couple of bottles of rose, which were good (Provence AOC).
Now, it is the mains where the food quality fell short. We ordered fish of the day to share among 2 of us, and the remaining 3 got lobster. (Like other local restaurants, they sell lobster by the gram, weighted raw. We had something like 2 kg (2000 grams) of lobster, at 29 EUR per 100 gram.) But alas, the lobstser was just average.
For the catch of the day, we opted for Turbot. While it looked good on the plate after it was finished, I think the staff did a poor job of dissecting it. They had difficulty doing it in front of us, so they had to take it back to the kitchen a couple of times. At the end, by the time it was served, it was lukewarm, and overcook. It was a bit disappointing to have overcooked, and lukewarm fish.
For a 2+ hour lunch at 1100 EUR, I would suggest trying other places.

I tried to ignored but was yelled at three times when I said I didn't want to buy anything because I don't have cash. When I told the waitress she said she is aware the seller is rude and everyone is aware of her disruptive behaviour but when I told the manager I was gaslighted. Apparently the seller never received a complaint before. I recommend don't go to restaurants that fail to protect customer's from disruptive non-customers. I wanted to call the police but it is the restaurant who should be charged for turning a blind eye to the abuse experienced by their own customers. Lunch, most comfortable and gentile service, with the old patron (who created this restaurant over 30years ago) still in the house, extremely professionally managed by the Hotel associates.
Fresh, luxury, good prepared and tasting dishes for lunch.
I had the pleasure to go several times to this restaurant during lunch and diner, also in the evening when the music live band on the beach gives a great performance...
Negative point: the beach beds are exclusively reserved for Hotel guests, which is a pity when having a family lunch and you can't finish on a beach bed taking a nap but this doesn't influence my rate for the restaurant
