Ferments Bakery — Restaurant in Marseille

Great vibes and friendly staff, sadly the coffees were in our opinion - undrinkable. Whilst we’d hoped fresh cows milk might be used in somewhere that appeared so artisanal it was the most horrendous uht milk we’d be served. This UHT issue is wider problem for brits used to fresh milk - but these were particularly bad. I’d asked for a latte and flat white. She handed me a “cappuccino” then when I explained I hadn’t ordered that she said it was the same thing. When I then asked the difference between the flat white and latte I was told a flat white has two shots and a latte one shot. This is not the definition but I didn’t have the energy to contest it. I thought whilst the coffees were no good the pastries looked excellent but when I got it back to the hotel the pan au chocolate was very dry and didn’t taste like it was made with butter but a substitute. One of those over-rated hipster places. Says on google maps they close Sun 12:30 (early for a Sunday no?) but it’s actually 12:00. Ordered a quiche for 5euro, no protein in any of them but go it anyways since I was starving. Asked them to heat it (who wants to eat a cold veggie quiche?) they said no not possible. So much to discover and taste here! Starting from the bread to the pastries (cinnamon rolls - wow), incredible textures and flavours. The coffee is on another level - Mati really made our experience exceptional. If you are willing, there is endless opportunity to learn and reflect on what you are drinking at their coffee bar, where you can watch the fascinating preparation processes.
