Good options with main dishes offered with your choice of red, white, or seafood meat with a veggie option for most items. Unfortunately, I did not see any difference between the vegetables/seasoning on the meat and veggie dishes, meaning that the vegetarian option is just the same but without any main protein item. This left me feeling hungry and craving nutrition and energy. I love flat noodles when wok fried and this is what drew me in but unfortunately unlike the picture shown the noodles on my plate were just the basic thin yellow noodles that you get at any countless number of 'traiteur asiatique' in Paris, it seems that these noodles are only used in certain meat dishes for some reason. The dish was about €12 (I would have been happy to pay more for some protein) and the can of coke was nearly €5 (I understand that this is where restaurants make their money and don't mind paying extra on drinks if the meal itself is decent). The staff were friendly and the place was clean and nice. However, overall, I was left disappointed and hungry after visiting this place. It's great that they offer veggie alternatives but it would be better if this was thought through. I am not expecting them to cook with vegetal meat alternatives (though you can literally buy these next door in Carrefour these days) but when they have specialisation in cooking with veggie items like Tofu I expect this in the meal instead of just being given a plate of carbohydrates and some seasoning. The rich, beefy stock seemed to be missing the proper amounts of star anise, cardomom, cinnamon, anise seeds, ginger, etc. that add complexity and a little tang to the broth. Also, the requisite plate of additives had scant basil, one spring of mint, lots of bean sprouts, and no sliced chilies at all. Maybe the chilis are a California thing? I'm used to restaurants listing differently cooked beef slices (rate/medium, etc.) and different parts such as tendon, tripe, beef balls. This pho had somewhat rubbery trype and well-done beef, and some sort of tasty, chewy balls. So, while quite tasty, and a deal at under €12, if you're seeking a spicy, complex pho, this is not it exactly, but it's still good. I had spring rolls with thinly sliced beef, not the usual shrimp, pork, or sliced mystery meat. The rolls were fresh and warm, the peanut sauce very tasty, not too sweet. It was quite a thrill to have authentic Vietnamese Sriracha. We've all gotten so used to Sriracha on everything, and in the US it's almost always the Sriracha made in southern California in a bottle that makes it look imported. Surprise! Another example, when I payed the bill, each restaurant usually asks, if everything was fine, they did not.
Last example, another customet told to the waiter that the soap in the toilettes was empty, he responded that „we have desinfection gel on the counter“. Well, this is not the same thing. A good waiter would have said: „Thank you for letting us know, we will take care about it“.
