I know this restaurant for at least 30 years. By that time, the food was similar but I did not had enough references to compare…. However the people who was serving us was nice. Few days earlier I had a chance to have lunch at the Imperial Choisy…. Really food was so so so…. Steamed chicken from Landes…. God no taste at all the skin is even not enough chewy to give you the taste of the chicken. Fortunately I asked for 2 portion of sauce so we can bring taste to the chicken. Belly Pork Roasted…., almost burnt… I am at the moment seating in a Chinese restaurant in Saigon. Ngan Dinh Restaurant and the owner is from Hong Kong…. I can compare and sorry for Impériale Choisy… I will grade 1/10 cause I have references Roasted Duck….. signature from this restaurant…. ARE WE KIDDING!!!! They don’t even know how to cut the duck…. Just messy not the right way to present the supposed destination dish. Again nice looking but far away from a real roasted duck Hong Kong Style. Dumplings with soup….where I am seating at the moment is 10/10 and imperial is even Zero for this dish. Steam fish….. I asked for a turbot which is the most amazing fish for steaming it with soja sauce… we took a seabass….. no comment!! Rice noodles sauted with beef and black beans. This dish is Ok…. Sauted on a wok which is bringing you the flavors. HaCao…… they serve 4….. we only took 1/2 of one….. DISASTER Service….. I stayed for a gastronomic week in Paris……. It was the most bad bad bad bad service. You have this young waiter which is telling us “there is rules on the restaurant” you said to me you will be 5 so I need to see 5 of you to let you seat at the table which was not reserved, no customers seating!!! I was drawn here by the promise of roasted meats and was not disappointed.
The roasted duck (烧鸭 - Canard Laqué) and roast pork (烧肉 - Poitrine de Porc Croustillant) were delicious, well seasoned and skilfully roasted.
The shrimp dumplings noodles soup (云吞面汤 - Soupe de Raviolis Aux Crevettes Avec Nouilles) had a generous number of prawn filled dumplings and lots of noodles but found the dumplings too dense. Noodles were springy and went well with the soup.
The seafood tofu pot (海鲜豆腐锅 - Marmite de fruits de mer et pâtes de soja) was a bland serving of not so fresh squid, prawns, scallops, fish, tofu, Chinese cabbage and carrots. The seafood was devoid of flavours, tasted frozen and overcooked. Tofu was hard and rubbery. After rounds of dousing with light soya sauce, only the sauce was palatable. Would definitely skip this altogether.
This restaurant is old fashioned, both taste and food style wise. They have persevered an old world Cantonese / Chinese taste that is no longer found in most of modern Asia. I am guessing that it is because they have stuck to the hometown recipes passed down by the original masters. The taste & experience are very similar visiting such establishments in the Chinatowns of San Francisco, New York and even Yokohama.
