According to me a ‘good’ vada pav is one which is fried in front of you and served hot & every batch which is fried disappears within a few minutes. I have never been disappointed when I have stopped here in the evening where batata vadas & moong daal bhajis were being fried fresh and had a vada pav & moong daal bhajis. The moong daal bhajis are very tasty as well along with the three chatnis. The Vada pav is always fresh and very satisfying. Well flavoured but not too spicy with a good balance of the masala, mustard seeds, turmeric and coriander leaves, garlic, green chillies in the potato mash. The besan batter coating is crisp and yet thin & not loaded with sodium bicarbonate to make the batata Vada appear large in size. Excellent taste of the Batata Vada. It need not be eaten only when hot as it tastes good even when it is cold. The chatnis added to the Vada pav are too delicious especially the green chillies pickle/thecha. It just takes the taste to the next level. The sparkling brass kadai in which the Batata Vada & bhajis are fried is a welcome asset compared to the iron kadai used generally by others.
