This pizzeria does something rare in Tel Aviv—proper dough proofing. You can taste the 24-hour fermentation, the high hydration, the polish-like texture. It’s a real pizza, not a rushed three-hour shortcut pretending to be high-end. But here’s the problem: no one cleans the tables. It’s self-service, but when customers leave, crumbs and grease stay. Even when it’s not busy, tables go neglected. A simple busser would fix this, but they haven’t bothered. Great pizza, fair service, but hygiene matters. Four stars—clean up your act.
