Right in the market square in front of the harbor, just steps away from boats and waves, appeared a place dedicated to meat lovers and traditional norcineria-style panini — a true challenge in a world dominated by seafood. A real story about courage and vision: Gemavvì – The Norcineria That Defied All Expectations. At Gemavvì, the ingredients are the stars. Artisanal cured meats, prepared according to traditional recipes, fresh and full of flavor, are transformed into mouthwatering panini. From fine salamis, local cheeses, crispy bacon, and soft rolls — everything is designed to highlight the authentic taste of Italian norcineria craftsmanship. Every baguette or panino is an explosion of flavors: crispy on the outside, tender inside, with simple but perfect combinations. Local spices, olive oil, and attention to every detail turn a simple sandwich into a gourmet experience. We began our culinary adventure at Gemavvì – Norcineria Baguetteria with Polpette di vitello su cremosa di pistacchio – an authentic delight. Qualcuno pensa che possa essere un ripiego, ma l’intuizione non ci tradisce. Una norcineria sul mare. Il nome ritorna alla mente e il tempo del richiamo denota una presenza sul territorio che ha consentito all’attività di superare il confine amletico dell’“essere o non essere”. La location è gradevole, sia la saletta interna rinfrescata sia lo spazio esterno. L’accoglienza è sorridente e ci mette già a nostro agio. L’attesa l’abbiamo ingannata con delle patate a barchetta al forno in versione cacio e pepe e della focaccia di produzione propria servita calda con sopra della mortadella artigianale, il cui profumo e sapore erano amplificati dal calore della focaccia. Per gradire una porzione di Culatello di Zibello della bassa parmense, presentato semplicemente adagiato e affettato sottile, come deve essere servito, per meglio cogliere la marezzatura della sua carne rossa e sprigionare il suo profumo penetrante. A seguire una digressione germanica con la salsiccia berlinese, crauti piastrati e la deliziosa senape all’antica, granulare al palato, dal gusto più deciso e uno stinco al forno adagiato su un nido di patate rigorosamente al forno. Rientrando in tema carboidrati nostrani, delle schiacciate con coppa di testa toscana, carciofi, rucola, scaglie di grana e profumo di lime. Saremmo anche arrivati al dessert, ma una foto che campeggia all’interno del locale ci ha fatto optare per un ultimo assaggio invitante che rappresenta un connubio di sapori tra Puglia, Lombardia ed Emilia. La baguette multi cereali, fuori menu, con gorgonzola al cucchiaio, dolce, morbido e spalmabile, prosciutto crudo dalla sapidità equilibrata e fiorone a fette, la cui stagionalità è un invito a non perdere l’occasione per degustarlo nel suo insieme, prima di dover aspettare il prossimo ciclo della natura. Se oltre a mangiare, avete voglia di soddisfare le curiosità che sorgono alla vista e al palato, non lesinate domande al proprietario. Sarete soddisfatti senza colpo ferire. Insomma a voler essere giusti, Gemavvì è una norcineria che troverebbe il suo degno collocamento nell’entroterra come sul mare per la passione nella ricerca della materia prima e l’accuratezza dell’offerta.

We've tried sharer plates of provolone cheese, along with capocollo and bread "crostini", but where Gemavví shines is the small plates of whatever is cooked for the day. We've had a couple of meat dishes: one of salsiccia with pancetta and red radish and another one of stripes of diaphragm cooked in an onion and red wine sauce. Really, really tasty. We will come back to try the rest of the menu soon! 🙂

Fantastic find in Torre a Mare! If you're looking for a place to taste some excellent local produce, look no further and stop here. We've tried sharer plates of provolone cheese, along with capocollo and bread "crostini", but where Gemavví shines is the small plates of whatever is cooked for the day. We've had a couple of meat dishes: one of salsiccia with pancetta and red radish and another one of stripes of diaphragm cooked in an onion and red wine sauce. Really, really tasty. We've had a couple of meat dishes: one of salsiccia with pancetta and red radish and another one of stripes of diaphragm cooked in an onion and red wine sauce. Really, really tasty.
