Outside a small town in the heart of Apulia appeared this osteria with nearly perfect scores - not a Michelin place, but wonderful and perfect takes on Apulia classics. There are many such places all very good. So how could it justify such a rating?
Because it does. This small and lovely place has I think the parents cooking and kids and friends of kids serving impeccably. Funny, casual, correct always. Then the food arrived.
We had the best tuna crudo we have had - mixed with mango, oranges and crumbs of local tarale biscuits. Fish was perfect and fresh. Impossibly this was the best Orichiette pomodoro with a light but rich sauce and beautiful pasta. The fish dishes were sublime.
We ate very well around the South - it is hard not to - but this was a standout.
Btw they chose a local falanghia - I thought it came only from Campania - and it was the best white of our trip and less...
