Osteria Pinchiorba — Restaurant in Gambassi Terme

After a 24 km walking, we ended the day here, a nice and cozy trattoria, on the Sunday evening. Not too many people, but the personal seemed very stressed. We hade a package paid in advance (B&B and dinner), so we didn't have too many options. At the first, they seemed to understand what is about. We've got a place and a menu in italian (not our strong field) and we were waited for some time to get help. The waiter come and took our drink order (no aperitif, only red and white wine of the house. When it was time to order, the waiter get confused when we explained that we don't know what is in our fixed menu. Again, back to the kitchen, asked, came back with the choises and we could order some. We took gnudi (some dumplings with ricotta cheese and spinach served with ragu from a local sausage. It was the best, so compliments to the chef! Next dish was some grilled meat, served with ruccola, red cabbage strips and diced, boild carrots, beetroot. The potatoes served separate, was too salty to eat, unfortunately. It was OK, but not more. Our choise of white wine didn't match the food at all. Our B&B host recommended this place to us. It was such a great suggestion! Located down a quiet street it has an excellent patio, but the inside has a warm charm with quirky, tasteful decor. Staff is friendly and was very patient with our poor Italian language skills.

We started with grilled pecorino, which had an incredible caramelized crust, complimented beautifully by the aged balsamic vinegar on the plate. Then we had duck speck - a smoked deli meat - served with red cabbage, pear, pine nuts and cheese. Really lovely flavour combination. The best was the gnudi - a ricotta cheese dumpling with spinach. It’s a wonderful dish we haven’t seen on any other menu in a whole month of travelling across Italy. It’s wonderfully soft melted ricotta, and they served it in a pork ragu from a local heritage breed of pig. This dish is a MUST try.

GESTIONE CLIENTI E ACCOGLIENZA PESSIMI. Ore 18:30, ☎️: buonasera, vorrei prenotare un tavolo x1 per le ore 20:00, è possibile? Ristoro: Certo! Ore 19:56, entro in sala con più che puntualezza e mi dirigo verso il responsabile in sala, sicché all'entrata non ci fosse nessuno. Al mio arrivo c'era un signore che mi percorreva, e in sala solo 2 tavoli. Una da 2, l'altro da 1. Il signore esclama all'addetto della sala: io avevo prenotato x2, ma mio figlio non è venuto, quindi sono da solo. Al che l'addetto lo indirizza a quel che doveva essere il mio tavolo. Dopodiché la sua attenzione va a me e mi dice: Tu? il sarei **, ho prenotato x1. Ah, ok allora aspetta un'ottima qui che ti si apparecchia. ATTENDO 20 MINUTI. Dopodiché mi indirizza su un tavolo di quelli che si usano quando ti piombano clienti all'improvviso. Sull'unico tavolo/sedie di plastica, sicché tutto il locale sia arredato con tavoli e in legno. Tutti i tavoli hanno una propria preparazione. La mia, invece, era pari a quella di quando ci si va a fare un pic nic, con un enorme foglio di paglia. Posate? Tovaglioli? Bicchieri? È un optional per loro, te lo portano dopo 10/15 minuti, rimanendo in completo senso di abbandono il cliente. Al che mi rivolgo ad una cameriera chiedendogli se fosse possibile spostarmi in altro tavolo, qualsiasi posto ci fosse, mi sarebbe andsro bene. Forche quello in cui ero seduto. Per altro messo in una posizione di continuo passaggio x i camerieri tra una le portate. Mi viene risposto che non ci sono altri tavoli, che all'interno c'erano solo tavoli prenotati e che io non potessi sedermi. Dunque con molta spontaneità gli dico: E il mio?! Ho prenotato un tavolo x1, dov'è?!! INNANZITUTTO I TAVOLI LI GESTISCO IO, quando vieni ti si apparecchia e ti siedi. Al che mi rivolgo con irritazione e gli dico: Dunque i tavoli all'interno sono prenotati e apparecchiato per le prenotazioni, e io che invece te ne ho prenotato uno da 1 dov'è?!! Lui non risponde, e io gli dico che cade con i suoi stessi discorsi. Non essendo capace di rendere a proprio agio un cliente. Esperienza pessima.
