Cibando — Restaurant in Martina Franca

I can just about bring myself to give this 1 star as the drinks and music (Latin, African, disco) were excellent. Everything else was abysmal, truly the worst food we have ever had in Puglia. This place should just stick to drinks and basic nibbles and it would be fine.

They don’t even give you bread or anything to nibble on (but still charge you a cover) and we were starving so we thought we’d start off by ordering patatas bravas and the steak tartare with buffalo mozzarella. The potatoes were severely under seasoned, no flavour or herbs or anything really, other than a strange garnish of shaved stringy raw celery which made you gag. The steak tartare was not even chopped up properly. It was essentially a raw steak with a piece of mozzarella on top. Tartare is supposed to be finely diced! And seasoned! And you use a fillet cut - this was full of fat and sinew and clearly not fillet/sirloin. We complained to the waitress who was pretty rude, saying we’d already eaten the mozzarella on top so there was nothing she could do?! We then asked to speak to the person who prepared it. This was when it got most bizarre - the young cook came out and tried to explain that that meat was all he could get at the butcher today (in which case, do not buy it and just say the dish is not available that day - he was clearly a novice), and then went on to say they have no sharp knives in the kitchen so he couldn’t cut it up properly. No sharp knives in the kitchen. If your cook has no sharp knives, you should not be serving food. Apparently it seems other people have enjoyed the food here which looks like it was from their “street food” menu (as opposed to main menu), which does not require sharp knives or much chopping to prepare. The street food menu looked pretty wack though (weird combos and fusions that no street food stall would sell) so that’s why we didn’t order from it.

At that point we were so annoyed we didn’t care to order mains or anything else. To top it all off they tried to charge us full price for all dishes when we asked for the bill. Sorry but this is a drinks-only place, which I’m sure could be quite pleasant if that’s...

Martina Franca 1.11.2023 Il locale si affaccia su di una piccola ma graziosa piazza, posta nell'isola pedale, per cui resta molto tranquillo. All'interno è veramente minuscolo, ci saranno 3 tavolini piccoli. All'esterno, invece ci sono un'altra ventina di posti. C'è un bagno solo, piccolo e soprattutto sprovvisto di salviette, con un antigienico rubinetto a rotazione, che bisogna impugnare, non solo per aprire, ma anche per chiudere. I tavolini sono in legno e l'apparecchiatura è di carta paglia e salviette di carta comune. Le cameriere sono gentili, efficienti e prestano attenzione ai clienti. Tuttavia, quando puliscono i tavolini, tengono in mano uno spruzzatore di igienizzante, che poi non spruzzano sugli stessi. Sembra destinato solo all'apparenza. Il menu presenta una discreta scelta di pietanze, fra cui panini e insalatone. All'arrivo ci sono stati offerti in omaggio lupini ed olive, a senza stuzzicadenti per prenderli. Le pietanze che abbiamo preso erano del tutto scondite di sale ed olio ed inaccettabili anche da una persona come me che fa poco uso di entrambi. Per carità, concordo con tutti quelli che hanno scritto che il cibo è buono e il locale bello. Ma organizzato in un modo a dir poco ridicolo: personale che vagava spaesato tra i tavoli, accoglienza fredda senza neppure prestare attenzione al cliente.

Quaranta minuti di attesa per il tavolo dopo aver visto gli amici del luogo passarci davanti, mezz'ora per avere il menù ed ordinare, e un'ora (non smetterò mai di precisarlo) per mangiare. E non cose stratosferiche, due taglieri di affettati, quindi non serviva neppure cucinare. Piatto tra l'altro arrivato perché uno dei camerieri serviva di corsa tutto il locale, gli altri a malapena un piatto e distoglievano lo sguardo ad ogni tentativo di chiamarli, salvo poi sparire nella cucina per tempo indeterminato.

Una valutazione così alta non è meritata, in base alla mia esperienza ovviamente. Soprattutto quando vedi un cliente aprire il suo panino per vedere gli ingredienti e vedendo che sono errati, mandare indietro il piatto...che il cameriere porta direttamente ad un altro cliente. Che disgustato rifiuta il piatto già toccato da un altro cliente, cosa che in un locale fa davvero...
