Our favourite pizza place in Puglia. They’re always booked out so you have to call to get a table at least 2-3 days in advance. It’s worth it though. It’s just one pizza maestro at the helm (highly trained - you can see all his accreditations on the wall) who has to look after a lot of tables as well as takeaway orders. The staff are understandably run off their feet, so if you turn up without a booking don’t be surprised if they’re exasperated and stressed out, and can’t always find a table for you. Give them a break and be nice!
When you are seated, they’re friendly, attentive and helpful. They even start conversation and crack a joke sometimes :) the pizza is just excellent - they’ve got some of the classics plus some unique inventions and adaptations. Avevo voglia di una pizza, non avevo grande aspettative perché la maggior parte delle pizza sono standard, buone ma niente di diverso! Sono una persona molto critico quando se ne parla di cucina e sono stato a starita a napoli e sorbillo quindi penso che me ne intendo di buono. Ho scelto la "ratatouille all italiana" pizza vegetariana e anche se la descrizione promettesse bene "pomodorino daterrino confit, cipolla rossa carmellata" non ero pronto a quello che mi è arrivato. La combinazione tra salato, dolce e gusto della stracciatella (che era di qualità) mi ha fatto godere con ogni morso, pure la freschezza del basilico e il polvere di peperone crusco sopra. Tantissimi contrasti e gusti in una sola pizza e non c'era nessun gusto troppo dominante. La base era fresca e spessa ma non troppo, come un misto tra napoletano e foccacia, e una volta finita ero decisamente sazio. Con una bottiglietta di birra e aqua e coperto mi ha costato 23euro in totale, la pizza che ho scelto ha costato 14, ma hanno pure la Margherita a 6, la bufala a 10, e la marinara a 9 quindi non posso descriverlo come un ristorante di lusso come prezzi. I camerieri erano discreti e non urlavano come spesso fanno, e due volte sono passati per chiedere se tutto mi andava bene. Rispondevo a gesti perché avevo la bocca piena. Consiglio vivamente per gli amanti di pizza.

What a surprise! I was hankering for pizza and as someone who knows pizza in italy very well, and also somewhat critical, i didnt have high hopes, but was happy to settle for a standard pizza that wouldn't blow my mind. So i found this place "pomodoro e basilico" a little nook on the edge of the centro storico with tables on the outside for summer. Even though the menu seemed promising with datterino tomato confit and red carmellised onion i still didn't have great expectations. When i tasted it i was quite suprised. The combination between the stracciatella and the sweet of the tomato and onion mixed wirh the savoury zucchini and aubergines was something special. The addition of fresh basil and a dusting of dried red pepper added even more to the mix. I found myself enjoying every bite. The base was thick but not too much, certainly enough to fill you if you're hungry! The waiters were discreet and attentive, no shouting across tables at each other! The pizza itself cost 14, more than what you usually pay but definitely worth it. I cant consider them a fancy expensive place either because they have plenty of other normal options like Margherita at 6euro and marinara at 9. In total it cost me 23 euro with water, beer and table service costing 9. Would definitely recommend to tourists looking for an experience or even locals looking for something different....

These pizze are both creative and use some of the best dough I’ve tasted. We went for two bianchi white ones for a change.
One with subtle and sweet yellow cherry tomatoes, and the other with wood oven grilled zucchini and mint. Highlight on both was their signature basil pesto (without garlic). Delicious and very interesting. Great fior di latte as well.
They have a nice terrace. We had dinner inside and the atmosphere there is very calming and soothing. Piano music, subtle crystal table lighting which makes your pizza look even more beautiful, and a big wood oven fire burning in the background.
On top of that they had one of the most amazing red wines (local, from Martina Franca) which we are now on the lookout for.
