For honesty's sake I will reveal that I personally do not enjoy Italian 🇮🇹 food (the exception is wood fire 🔥 pizza when made properly) because I fully agree with the well researched theory of esteemed Professor Alberto Grandi that Italian cuisine does not exist. I spend 4 to 5 weeks every year in Italy and always cook in my rental apartment or eat in non-italian restaurants (mainly Asian restaurant) as I find Italian food to be very bland, too simplistic and lacking in flavour. I decided to eat at this osteria because I walked past it a few times and saw it is always full with locals. The service is excellent and the male waiter speaks English fluently. The bread is inedible and at least two days old (probably three days old). On Friday, November 15th at 13:35 three men who are surely regular and frequent customers ate at the table next to mine. I knew this because the male and female waiters spent many minutes speaking and joking with them. They complained the bread is stale and inedible. The waitress took their bread to the kitchen and brought them a new bread basket. She even touched the bread with her hands on several occasions (I speculate she did this to illustrate to them it is soft to the touch). This is not rare practice in Italy but it makes me wonder about hygiene practices in the invisible kitchen. The antipasti dish was an arugula salad with prosciutto and pecorino cheese. The quality of the prosciutto and cheese is low (cheap supermarket quality). The salad has no sauce nor any herbs to elevate it to the next level. Instead it has small pieces of raw mushroom. Mushroom is a protein rich vegetable and it is best to cook it. Yes it is possible to eat raw mushroom but it doesn't taste good plus it would require two soakings and rinsings in salty water to make safe for consumption (I highly doubt this practice is adhered to by those in the kitchen). The menu is limited and is basically fish, tasteless pasta (it is enough to look at it to understand) or steak in a dozen variations. The so called Argentinian 🇦🇷 beef steak is a good quality piece of meat and is grilled to perfection (hence the second star) but it comes with a lame salad that consists of low quality tomatoes (the kind that grow under plastic with no access to sunlight), similar quality lettuce and small shavings of... you guessed it... pecorino cheese. Why there is no oregano, thyme, marjoram or any herb to actually qualify it as a salad is a mystery. I opted for chicory as a side and it turned out to be chicory leaves that are very bitter because there is no garlic and honey to reduce from the bitterness. How locals enjoy this bitter and tasteless food in a globalised world is a testament to the power of habit. Last and also unfortunately least the so called "extra virgin olive oil" smelled strongly of sunflower oil mixed with rancid processed olive oil so it should be avoided.

Always I’m posting the empty plates… first, what a gift to be able to eat when hungry. The pasta caccio e Pepe is perfetto. Anche the fish in taters. Mind, heart and belly truly nourished - after 22km walking the Via Amerina/Via Francigena today, we give thanks.

Scrivo poco, e leggo ancora meno. Fame ! Ciòancorafàme, caXXo.. Eppure, 0re 13, sono stato a pranzo fuori.

"Non giudicare, chi sei per giudicare?!? " MA.. c'è la paranza di oggi, che ora mi frega. E niente, allora...giusto due righe dopo molto tempo.

Trattoria IV Secolo : Bucatini all'Amatriciana [i] ; Frittura di paranza [ii] ; Broccoli ripassati [iii] ; Seada [ ! ] .
