Santo Trastevere — Restaurant in Rome

I recently had the pleasure of dining Santo, and I must say that it was an extraordinary experience. From the delectable and original cuisine to the friendly and attentive service, this establishment left a lasting impression on me.

The menu at Santo is a testament to culinary creativity and innovation. The dishes presented a delightful blend of flavors and textures that truly set them apart from typical restaurant fare. What a disappointment...we found this place thanks to a recommendation but then saw very mixed reviews. As we work in hospitality ourselves we know that bad reviews are not always to be trusted so we gave it a try....

Very nice atmosphere with a lovely terrace tucked away from the busy Trastevere streets. Menu is small but looked interesting and different from the usual carbonara etc...

Welcoming staff, we got seated straight away and got drinks very quickly. Ordered some starters which were okay and came out quickly...we were hoping that they wouldn't bring out our mains straight away so we could enjoy our wine but oh boy what a wait !

After more than 2 hours, still no food and none of the other tables looked like they had mains either..asking the waiter : 'subito, subito" but nothing ever came and we were completely ignored. After more than 2 h wait (and by then we were starving ) we walked out...I don't know if they had an off day or had some problems in the kitchen but such a long wait is not acceptable ( and we are used to slow meals in our part of the world)

This could be a fantastic place, we really enjoyed the first half of our meal but time management needs to be improved. I don't mind waiting if I am told they are having a slow night but this needs to be...

GO HERE, IT IS AN UNBELIEVABLE EXPERIENCE

Trastevere is a well known neighborhood for night life and food. In this place, past the tourist traps of the well known restaurants with massive lines is Santo Trastevere, a truly authentic experience with a friendly local vibe of young but well trained staff. It was an amazing experience. I had never been there before, but Genco the owner treated me like a friend. We laughed we talked we ate and we drank. Bartender Francesco who is a real artist with his drinks my name for him was “il maestro delle libagioni“ great guy great bartender. The rest of the Staff who’s names escape me, were also amazing.

The food: my god the food. In Rome it’s pretty easy to find a restaurant for “ cibo classico di roma” but at Santo you get creativity, true culinary artistry and explosion of flavor in every dish. The Beef Tartare was juicy, with the egg yoke dripped into the toast making every bite balanced and complete. You MUST have the beef Ravioli. As I told Genco, the only way I can describe it, is as though Jesus is speaking to me with every bite.
