I've been to at least two dozen Michelin-Star Restaurants all over the world, mostly in Europe and tonight we had probably had the best service ever.

The waiter had such a friendly attitude, he told us a interesting back story to the recommended wine, gave us tips what to visit in Puglia, and did overall an outstanding job.

But not only him, but the whole service team was super friendly always there when you needed them, but not brash at all.

Of course the service in a good restaurant is important, but the food plays the main role - and it did, in a spectacular fashion.

All dishes have been on point and matched greatly into each other.

We choose the surprise menue and all dishes have been fantastic - with a few extra surprises.

Afterwards we had the chance to have quick chat with the cook Stefano himself, a humble man with outstanding skills.

We had an absolutely wonderful evening and the bill was very moderate compared to similar restaurants in other countries. In Germany you would had to pay twice the price - easily.

So what's left to say? Visit the Quintessenza Restaurant if you're even remotely...

Easily 5 stars. Nothing to dislike, everything to love. The best meal we had in Puglia. The best service we had in Puglia. The best conversation we had in Puglia. If you're looking at the Michelin guide and debating where to dine while in Puglia, make sure Quintessenza is on your list. Candidly, we didn't have great luck with a couple of Michelin recommendations in other cities earlier in our trip. However, Quintessenza helped us end our trip on a high note. We did the Classici tasting menu, and not one bite disappointed. Think of it this way, if you want to experience the classic flavors of Puglia using the highest quality ingredients in an accessible atmosphere presented through a fine dining lens via a highly skilled modern interpretation backed by knowledgeable and supremely friendly service, then Quintessenza is an easy choice for you. Here's your dilemma though. If you eat here early in your trip, nothing else may compare, and if you eat here late in your trip, you'll likely forget all the other...

Eight of us visited this remarkable restaurant for a Sunday lunch.

Location of strong value. An historical building that used to be directly connected to the nearby castle respectfully revamped with modern internal architecture. An important project, not only for the young talented DiGennaro brothers but for their hometown too.

The seven course menu "quintessential" has been sapiently paired with a vegan menu for myself. Worth a mention my potatoes and truffle dish, extremely delicate although with strong, elegant contrasts.

Unfortunately we initially picked bottles of our liking without really "reading" the interaction with our dishes as we did not see a wine pairing solution suggested on their menu. Saverio, the sommelier brother guided us with the last two bottles. For the next time, I would welcome a more structured wine pairing solution.

The restaurant is beautiful both inside and outside, refined and perfectly blended in the environment. The service was excellent, kind and friendly with invading our spaces. The restaurant had also no problem into accommodating variations on the menu proposed. But let’s come to the reason to come here, the gastronomical offer of Quintessenza is deeply rooted into the chef local background, relying on seafood and not being afraid of using staples of the regional cuisine twisting them into something more. The menu we tried was a crescendo in intensity and depth but keeping its balance all the way through from the amuses to the dessert. Personal favourites are the Tortellini and the Fusillone with a mention for the Alici fritte and the Coffee almond and lemon dessert.
