We made time for a fully paired, 6-course prix fixe dinner Portanova Ristorante in Urbino last night and thoroughly enjoyed it! We were greeted by Sylvia, one of the owners, who provided incredible service throughout the evening, including thoughtful commentary on the plates, choices of ingredients and the wines. We felt comfortable leaving ourselves in the chef’s capable hands as we explored local ingredients from around Urbino and the nearby Adriatic. The starter was comprised of a trio of small bites, including local truffles (in season), a deconstructed tomato basil demi salad, and a delightful sesame encrusted watermelon sashimi which provided a combination of freshness and umami. We progressed to pigeon, typical in the Urbino region, prepared three ways. While the breast, meatball and pigeon sauce were delicious, the dry spice on the leg was divine! We then progressed to the first of three seafood dishes; the “Fish & Bread”, consisting of local sea bream, mussels, clams and raw mantis shrimp in a bisque with grilled bread cream. This was followed by the paccheri, with more raw mantis shrimp and a mantis shrimp bisque, alongside a wild fennel pesto and fresh buratta. We were then treated to a second pasta, which turned out to be one of my favorites; tortelli studied with goat’s milk and sea urchin, garnished with a sweet candied ginger and cubes of an arugula gel. The secondi was a delightful, perfectly cooked piece of sea bream on humus and local olives topped with dried pork. Between the mains and desert our hands were sanitized with an edible juniper sanitizer, and we each received an edible mint toothpaste to refresh our palates. From there we capped the evening with desert wine and a fried ravioli stuffed with casciotta cheese, almonds, honey and bitter orange compote. Some delightful dolce and an espresso later and we were truly stuffed! In all, it was beautiful meal, with delightful wines, in an intimate room and capped off with incredible hospitality… there’s not much else you could ask for. A truly memorable evening.

Provato mesi fa. Una bellissima serata enogastronomica quella trascorsa in questo ristorante gestito da una giovane coppia davvero capace, innamorata del loro lavoro e che trasmette tanta tanta passione. La brigata è altrettanto professionale e quello che ne esce è una fantastica alchimia che poi si trasmette nei piatti e nel servizio. Il locale mi è piaciuto tantissimo, un perfetto connubio di modernità, rappresentato nella prima sala dove si cena con la bellissima cucina a vista, e rusticità: spingendosi più avanti nel locale si entra in un ambiente fatto da bellissime volte con mattoni a vista dove si può cenare in piccole nicchie riservate. Tutto molto bello e di buon gusto. Veniamo all’offerta culinaria! Il menù era davvero molto ben costruito e la cosa che mi ha affascinato e incuriosito, soprattutto mentre mangiavo, è che l’ho trovato come una narrazione, anzi come un album di famiglia. In questo menù c’è la loro storia, le loro radici, i loro viaggi e la loro terra: quella dove hanno deciso di aprire la loro attività da poco più di un anno. Ero venuto qui con un’idea di piatti da mangiare: infatti durante la visita ad Urbino mi sono soffermato a guardare la loro proposta che era appesa all’esterno del locale, ma poi, appunto durante la cena, ho cambiato la mia idea e mi sono letteralmente fatto trasportare dal loro racconto. Si inizia con un entreè offerta dalla casa dove spicca il pane sardo “rivisitato” che ho molto apprezzato così come il pane di loro produzione con lievito madre che ha accompagnato il pasto. Da bere, grazie all’ottima descrizione che la proprietaria ha fatto, abbiamo deciso di andare su un Conero “Folle” 2018: un Montepulciano in purezza di ottima fattura dove l’alcolicità importatnte è stata comunque ottimamente bilanciata dando al vino un’ottima eleganza, freschezza e bevibilità. Ho cominciato con un sandwich di manza marchigiana su base di midollo e nasturzio. Piatto armonioso di gran qualità e dall’ottima materia prima. La carne era la gran protagonista e devo dire che mi ha davvero sorpreso per la sua tenerezza. La mia compagna ha invece apprezzato il loro “ricordo di una gricia al Colosseo” dove qui il protagonista è diventato il carciofo. Passiamo poi direttamente al secondo, che per me è stato il petto d’anatra affumicato con fichi glassati e blu di Montefeltro. Questo piatto era poesia allo stato puro: complesso, tecnicamente perfetto, ben bilanciato ed equilibrato in tutti i suoi sapori che avrei mangiato all’infitio. E’ qui che ho deciso di dare una svolta alla serata e di abbandonare i piani iniziali che mi avrebbero portato ad ordinare la selezione di formaggi, ma la loro storia e la loro cucina mi imponeva di leggere anche i capitoli successivi. Quindi si va avanti e ho ordinato un bon bon di Anatra e pecorino di Pienza, preparazione davvero gustosissima e, a proposito di radici e di album di famiglia, qui c’è la dedica alla mamma pientina doc! Bello! Ho poi chiuso con un dolce? Macchè! Si prosegue con l’ultimo piatto: direttamente dal loro viaggio a Malta ecco riproposto una coscia d’anatra con omaggio al Commonwealth: salsa bbq, burro d’arachidi e mai grigliato: gustoso, completo, divertente e ben fatto. Un suggerimento: la prossima volta che andate a Malta fatevi tentare dal piatto tradizionale…pesce? Ma neanche per idea! Trattasi di coniglio, porposto in vari modi, ma il mio preferito è saltato in padella con sugo di vino. Ovviamente sarei curioso di trovare nel piatto nel vostro ristorante la vostra rivisitazione….mi farei 700km (andata e ritorno da Milano) solo per questo. Bravi davvero, non sono nessuno, solo un grande appassionato di cibo che con la mia compagna mi diletto ad organizzare escursioni enogastronomiche in giro per il nostro paese, ma voglio dire che è davvero bello trovare realtà come la vostra dove la passione, unità alla bravura e alla capacità di raccontare qualcosa fanno davvero...
