We had an incredible experience at Sustable. As soon as we arrived, we were welcomed in by Maestro Roberto Susta and he chatted with us for a long time. We were impressed by his friendliness, generosity, and his mission to make great pizza for everyone. And the pizza... Absolutely fantastic. We ordered three pizzas and each one was expertly crafted and creatively inspired. The Pizza Fiocco is the most famous pizza at Sustable, and for good reason. The fiocco conjures incredible flavors and textures from such a simple idea. The Ambra was my favorite and the onions marinated in wine packed a flavor explosion unlike anything I have ever eaten on a pizza. The crust is a highlight - light, fluffy, digestible, and soft and crunchy in the same time. There was magic in every bite, and we felt we were not just eating food but a culmination of inspiration and love. Thank you to Sustable and especially to Maestro Roberto Susta for an unforgettable dinner!

Seguo susta sui social e le aspettative erano molte alte, ma purtroppo sono rimasto molto deluso. - Location: esterno un po’ anonimo e interno non molto grande, ma curato. Una nota sui tavoli: sostituite i tovaglioli bianchi di carta che stonano con tutto il resto.. sa di economico, cosa che poi vedremo non è. Per quanto riguarda il parcheggio la pizzeria dispone di un piccolo parcheggio custodito difronte, ma non è difficile trovare posto in strada (2/5) - Tempi e servizio: ci è andata bene, entrati con prenotazione alle 20:00 di sabato sera, servizio efficiente e veloce essendo fine settimana, 15 minuti per ricevere antipasto e altri 30 per le pizze, ci sta con i tempi (3/5) - Antipasti: abbiamo scelto due frittatine di pasta, la genovese e la bolognese, forse l’unica nota positiva della serata. Il sapore è molto buono, fritto pulito e non eccessivamente pesante, nella genovese la carne era eccellente, forse come quantità un po’ troppo, consiglio di prenderne una diviso due (4/5) - Pizze: abbiamo ordinato una Zucca e una Bufalina. Impasto buono, soffice e ben cotto, peccato per gli ingredienti che non sono per nulla equilibrati. Soprattutto la Zucca, pienissima e con almeno mezzo centimetro di zucca che riempieva l’intera pizza. Il sapore dolciastro copriva ogni cosa e a stento si riusciva a far percepire la salsiccia e la pancetta. Inoltre avevano dimenticato di mettere la stracciata di burrata all’uscita. La Bufalina invece nulla da dire, una buona pizza al disopra della media. Nel complesso mi aspettavo molto ti più sulle pizze (2/5) - Conto: è stato veramente molto caro e ingiustificato. Non sono presenti ingredienti pregiati che fanno lievitati così tanto i prezzi. La frittatina alla genovese 10€ forse ci può anche stare, essendo quasi un piatto di pasta. La Bufalina 12.50€, ma la Zucca 20€ è veramente esagerato. Mai visto dei prezzi così alti, nemmeno per pizze con prodotti pregiati e in posti più raffinati (1/5) Questa esperienza è stata alquanto deludente. Peccato, perché l’impasto era molto buono, ma conta tutta la composizione per una buona pizza. Strafare e riempire di ingredienti fini all’orlo non è la strategia migliore. La soddisfazione è quando il cliente si gusta l’intera pizza e la mangia completamente senza sentirsi gonfio come una mongolfiera. È veramente brutto vedere i tavoli con tantissime pizze lasciate nei piatti o persone che chiedono una scatola d’asporto perché sono riuscite a mangiare una sola fetta. Consiglierei questa pizzeria? Travelled from the Napoli City center to try this place out as recommended by Vito Iacopelli on YouTube. Vito is a master pizza maker and he knows what he’s talking about when recommending Sustable. I ordered a pizza bolognese and Buffalina. Definitely some of the best pizza I’ve had on my trip to Naples. The service was quick and the location was chill. The chef/owner Roberto introduced himself to each guest and asked me where I was from and about my own pizza making back home. I felt very welcomed and it was a nice change of pace from the hustle and bustle of the city center. Please keep in mind that it can be a bit tough to make it back to the city center later in the evening as ride hailing apps might take a long time/not come. Come hungry and enjoy!

Sustable had been on my radar for quite some time. I had heard great things about it, and finally experiencing it firsthand confirmed that the praise was well deserved.

We started with a selection of appetizers that immediately set the tone for the evening. Each dish was thoughtfully prepared, full of flavor, and most importantly when it comes to fried foods: light and clean. The frying was expertly done: nothing greasy, no overwhelming oiliness, just crisp, delicate textures that let the ingredients shine.

Then came the pizza. This is where Sustable truly stands out. The dough, crafted by Maestro Roberto Susta himself, is a masterclass in balance, light and airy on the inside, with a perfectly crisp outer crust. Every bite delivered that satisfying contrast of crunch and softness, proving that great pizza lies not just in the toppings, but in the soul of the dough.

The overall atmosphere of the bistro reflects the philosophy of its creator: warm, welcoming, and dedicated to quality. Maestro Susta greeted guests personally, and his attention to detail shows in every aspect of the experience.

We came from Puglia to eat here after seeing a video from Guga Foods on YouTube last week. Parking was easy and our table was available at exactly the time we booked, no waiting at all. We started with a Frittatina Classica Napoletan and a Frittatina Bolognese. These were beautifully prepared and freshly cooked. They were both delightful crispy with a soft filling packed with flavour. The service was excellent, friendly and efficient but never rushed. Chef Roberto greated us when we arrived and even came to check we were enjoying our pizzas, he was genuinely interested to know how we found his pizzeria. We shared a Pizza Fiocco and a Margherita D’oro between the two of us. Both were exceptional good. The impasto was amazingly light and crispy at the same time, a wonderful experience. The Margherita D’oro was a great combination of sweet yellow tomato and deeply savoury mozzarella with a real taste of basil too. The Pizza Fiocco was just like I expected from the videos and reviews I had seen, an amazing pizza. The best pizza i have ever eaten, anywhere in the world. A little bit outside of the tourist space of Naples, but worth the effort to get here. The staff is 100% on point. Of course the place was full with people the whole time but it wasnt a problem to get a seat. Not only the pizza but the starter dish of some traditional pasta with meat and 20 hour slow simmered onions (Direct quote from the mouth of the chef). It was also probably one of the best small started pasta dishes ive ever eaten.

You can tell that the staff that works there are having fun and enjoying the service. You may have to flag people down once in a while because they are servicing so many orders.

Just go there and get a glass or two or wine or beer if you like. Take whatever starter they decide to offer you, and get the Pizza Fiocco. Roughly 40€ for this combination. You will never taste a pizza so light and digestible as this pizza. 48h Fermentation starting with a Biga prefermented dough. Cream base with ham and cheese, riced potatoes on top.
