Sustable had been on my radar for quite some time. I had heard great things about it, and finally experiencing it firsthand confirmed that the praise was well deserved.
We started with a selection of appetizers that immediately set the tone for the evening. Each dish was thoughtfully prepared, full of flavor, and most importantly when it comes to fried foods: light and clean. The frying was expertly done: nothing greasy, no overwhelming oiliness, just crisp, delicate textures that let the ingredients shine.
Then came the pizza. This is where Sustable truly stands out. The dough, crafted by Maestro Roberto Susta himself, is a masterclass in balance, light and airy on the inside, with a perfectly crisp outer crust. Every bite delivered that satisfying contrast of crunch and softness, proving that great pizza lies not just in the toppings, but in the soul of the dough.
The overall atmosphere of the bistro reflects the philosophy of its creator: warm, welcoming, and dedicated to quality. Maestro Susta greeted guests personally, and his attention to detail shows in every aspect of the experience.

Read moreWe came from Puglia to eat here after seeing a video from Guga Foods on YouTube last week. Parking was easy and our table was available at exactly the time we booked, no waiting at all. We started with a Frittatina Classica Napoletan and a Frittatina Bolognese. These were beautifully prepared and freshly cooked. They were both delightful crispy with a soft filling packed with flavour. The service was excellent, friendly and efficient but never rushed. Chef Roberto greated us when we arrived and even came to check we were enjoying our pizzas, he was genuinely interested to know how we found his pizzeria. We shared a Pizza Fiocco and a Margherita D’oro between the two of us. Both were exceptional good. The impasto was amazingly light and crispy at the same time, a wonderful experience. The Margherita D’oro was a great combination of sweet yellow tomato and deeply savoury mozzarella with a real taste of basil too. Read moreThe best pizza i have ever eaten, anywhere in the world. A little bit outside of the tourist space of Naples, but worth the effort to get here. The staff is 100% on point. Of course the place was full with people the whole time but it wasnt a problem to get a seat. Not only the pizza but the starter dish of some traditional pasta with meat and 20 hour slow simmered onions (Direct quote from the mouth of the chef). It was also probably one of the best small started pasta dishes ive ever eaten.
You can tell that the staff that works there are having fun and enjoying the service. You may have to flag people down once in a while because they are servicing so many orders.
Just go there and get a glass or two or wine or beer if you like. Take whatever starter they decide to offer you, and get the Pizza Fiocco. Roughly 40€ for this combination.
