弥助鮨 — Restaurant in Kofu

You absolutely have to dine here if you are at all a fan of sashimi.

Run by the sweetest husband-wife couple, we were extremely lucky that they accomodated us for an omakase dinner even though they were busy serving a large group event upstairs. Their sushi is superbly fresh (I loved their ika, snapper, various cuts of maguro and especially their uni which was the best I've ever had in a long while) and is reasonably priced too! They can even customize precise details about the sushi to your liking - whether you want more/less rice, have the rice more tightly packed, more wasabi etc.

Note that it helps if you can converse in basic Japanese as they may not be well versed in English. They also take time to prepare everything carefully so please do be patient with them as they value quality a lot. Fullest 5 stars I've...
