Yesterday we had the opportunity to eat dinner at Asatake. It was incredible! A memory for life. I have eaten in many restaurants around the world. I also have a background as a chef. This was one of the best experiences ever. It was the purest expression of the best seasonal ingredients, striking a perfect balance between honoring the tradition and also being innovative. The chef cooked with such passion and skill, and it was beautiful to watch his work preparing and plating the food. My mother and my friend also said it was one of the best meals of their life. Overall it was a symphony with each note carefully balanced to created an experience that was greater than the sum of its parts. There were many standout dishes, but four of my favorite experiences were 1) Toyama squid 2) nodoguro grilled - I could not believe that a white fish is so fatty, I have never tried something like that 3) his home made kinome miso 4) finally, bamboo shoot from Kansai region. To taste the top and bottom of the bamboo shoot made me realize the power of “butchering” vegetables. To treat them with such respect and serve the different parts to create different experiences. I was surprised by the floral fragrance of the top part of the shoot. We reserved dinner today and had the option to choose from three courses. we selected the "Yuki" (the snow) course. seasonal best ingredients are used for every menu, and we enjoyed dishes like sashimi, tempura, wild boar, and Hamaguri (clams), all of which were impressively delicious. The selection of sake, chosen to complement the dishes, harmonized perfectly and enhanced the menu's flavors.

大阪メトロ御堂筋線 北花田駅から徒歩10分 住宅街の佇むカウンター6席とテーブル2卓の小さなお店。
今回は夏のコース。 ディナーの時間に伺いました。 季節を感じられる計7品のコースでした。
率直な感想。。 『入った瞬間から【また来たい!!】』 と思えるようなお店でした
美味しさ、雰囲気、店主さんの人柄、 コスパ、気遣い、立地のこだわり
どれを取っても本当に満足です。 予約の際の細かな要望も本当に多く寄り添っていただけたことも印象的です。
料理のこだわりや押し付けない柔軟さや 「美味しいねと笑ってほしい」という メッセージがすごく居心地がよかったです。
今回食べた月コースは 先付、造り、焼き物、煮物、揚げ物、食事、甘味とベーシックな懐石コース。 どれも感動するけどどこかほっとするような味で、時間を忘れて食事を楽しむことができました。
《先付》ばい貝やツルムラサキ、アスパラや錦糸瓜を使ったさっぱりとした夏の1品。
《造り》ハモ、マグロ、あおりイカ。マグロは「背トロ」という希少部位もいただけました。
《焼き物》アユの塩焼き 1時間近くかけてじっっっくり焼き上げた鮎は頭から全て食べられるほど 骨はサクサク、身はホクホク。塩加減極上です。
《煮物》この時期の王道。蛸柔らか煮。 噛むほどに旨みが溢れる蛸と季節の野菜。 五感が喜ぶ一品です。
《揚げ物》夏野菜の天ぷら 野菜が美味しいのはもちろん、衣にもこだわる徹底っぷり。表面サクサク、中がまるで蒸し料理のようなジューシーでほくほくな食感が最高でした。
《食事》新生姜ご飯 「飾らない美味しさがいい」店主のこだわりが詰まった〆です。 シンプル。もっと食べたい。そんな気持ちで満たされました。
