La Brique — Restaurant in Sapporo

Incredible. Chef Satoshi Shimaya trained at a Michelin Star restaurant in Paris and shows both technique and creativity in his cuisine. His plates feature mousses, foams, masterful protein cookery, and precise knife skills, all to showcase the beautiful local ingredients. Every plate is artful, inspired, and delicious.

Service was exceptional. Even though communication was limited, the staff were very courteous, attentive, and hospitable. The manager (who also presented and described most of our dishes) was flawless.

Had the chef set lunch. The place was not busy that day. Food were done well with local and seasonal ingredient. Need better explanation of the dishes though. We need to rely on Google translate. With the main course, there is a choice between venison or beef. We were told stew beef but from a previous post, it was slow cooked beef cheek. My wife had that and she was delighted at the result. We had the Noel 2022 menu which was overall very good. Stand-outs were the beef and the dessert. Very nice wine bottle selection and btg as well. Nice and friendly service.
