Back Fat (se-abura) not my thing Raraitei is a ramen restaurant franchise originating in Fukuoka, so provides pork bone broth ramen ad well as miso and soy sauce ramen. The pork broth is also really soy sauce pork broth and thus thinner. It is thinner still than other soy-sauce-pig-bone ramens due to the way in which Rairaitei provides luxuriant thickening to its broth. There are various ways. The standard pork bone broth way is to create an emulsion of ground pork, ground pork bone, and liquid pork fat. This type of emulsion is our favorite, and is provided by the nearby exquisite Taishou Ramen. Other restaurants add dairy products to the pork soup to obtain a (fake?) similar effect. Adding dairy products (milk or cream) is I think the method used by the nearby Tenkaippin Ramen restaurant. Rairaitei takes a different approach and adds grated pork dripping to its soup. Think lard, grated like cheese, floating on flavored hot water. It may be surprisingly healthy because despite giving the appearance of containing a lot of fat, the fat largely remains in the bowl. The standard pork broth emulsion may be worse for the health since one is more inclined (or I do) to drink the fatty, salty soup. I think few people drink Rairaitei's grated-lard topped soup. Next time we are forced to go, when Taishou Ramen is closed, I will ask Raraitei to remove the fat. This lard free option is called "se-abura nuki." the ramen is good, you can customize the ingredients to add more or to remove or just normal also you cannot ask for another round of noodles for cheaper price which can be done in some ramen shop but for me its enough. the shop is small, so if you go meal times you will be waiting outside waiting for your line number to be called.

やってきたよ！ラーメン並木と双璧を並べる巨店「ららら来来亭」 20年前に初めて食べたとき（マウント）に衝撃を受け、一時期は昼来来亭夜来来亭のときもあった。チャーハン定食880円だったね。 ポイント制度始まる前から通い続け、シールをすぐなくすからとポイント貯めずに通い続けた愛しの店。 アプリになり、速攻で千円無料になった。豆田社長にもメール送ったがいまだ返事なし。忙しいからあの人。
来来亭愛はさておき、周南店。店員さんの愛想が悪いとか提供が遅いとか書かれてるけど、書いてるやつ何様なの？でも、ほんとかな？
結論からいうと、嘘でした。接客めっちゃ気をつかってくれてます。あと、時間帯によって待ち多数でめっちゃ混んでます。提供遅いのは混んでるから。それは待とうよ。我慢しよ。そんな気が遠くなるほど遅くはない。味もうまい、うまい。背脂復活いつかな？ 昔は来来亭、超厳しくて客の前で店員さんめっちゃ怒鳴られてる店とかよくあった。麺場に命かけてた。今もうまい。周南もうまい。
めっちゃ幸せ。また食べたい。
女の店員さんもかわいい子ばかりで、特に名札に妹と書かれた店員さんスマイル素敵すぎて元気でた。ありがとう。
