This shop has kind of a gacha system where the menu changes depending on the color of the noren. On my visit, the noren was white. Most people opt for the shoyu or the shio but ig I was getting quite fatigued with those so I went with their niboshi offering. I've read that their niboshi-infused shoyu and shio are extremely clean. I can sort of see that because this pure niboshi bowl was incredibly smooth and delicate. Albeit it can't be helped that this bowl still retained a bit of that bitterness of dried fish. These thin and snappy paired really well with this kinda broth so no complaints there. Read more2024.4月末 土方歳三の生家のすぐ傍にあります。 開店10分前に並んで13人目、客席が6名なので一回転目には 入れず中の順番待ち席で座って待ちました。 暖簾の色でスープが変わる言う事ですが、当日はメヂカを表す赤色。売り切れで具材が全部入りの様な特しかなく特メヂカ醬油の食券と気になった替玉中華を購入。ご主人が一杯ずつ丁寧に作り、ラーメン店ですが箸入れがあり、オリジナル。 箸も良い物が使われ焼き印もあるのも印象的。 特めじか醬油ですが特とあって、鴨ロース、浅利、チャーシュー、玉子、カイワレ、青菜、海苔と覚えられない程の沢山の具材がのっていました。スープは枯節の様な香ばしい香りに、塩味が立ちます。麺は極細麺で柔らかなイメージ。 替玉中華は麺だけでは無くスープ付の混ぜ蕎麦の様。 予め主人から味がかなり濃いと説明があったのですが、 その通りでより塩味が立つ印象。最初のラーメンと違い 煮干し入りのお酢、出汁醬油が提供され徐々に味を変えるようです。添えられた山葵やお酢で尖った塩味が抑えられ、卵の黄身でまろやかに纏まります。
気温が高い中で歩き回り汗をかいた後でしたので 良かったです。
End of April 2024 It is located right next to Toshizo Hijikata's birthplace. I was the 13th person in line 10 minutes before the store opened, and there were 6 seats, so by the first turn, I couldn't get in, so I sat in the waiting area inside and waited. The soup changes depending on the color of the noren, but on that day it was red, representing Medika. Since it was sold out, I bought a meal ticket for special Medjika soy sauce that seemed to come with all the ingredients, and a substitute Chinese dish that caught my eye.
The owner carefully makes each bowl, and even though it's a ramen shop, there is a chopstick holder, which is original. It is also impressive that the chopsticks are of good quality and have a branding iron. It was made with tokumejika soy sauce, but it was special, and it had so many ingredients on it that I couldn't even remember: duck loin, asari, char siu, egg, seaweed, greens, and seaweed. The soup has a fragrant aroma similar to dried bonito flakes and a salty taste. The noodles are super thin and have a soft texture. Kaedama Chinese noodles are not just noodles, but are like mixed soba noodles with soup. My husband had explained to me in advance that the flavor was quite strong. That's right, the impression is that it tastes more salty. Unlike the first ramen Vinegar with dried sardines and soy sauce are provided, and the taste seems to gradually change. The wasabi and vinegar that came with it muted the salty taste, and the egg yolk made it mellow.

席に案内 割り箸になんと店名が刻印!これは初めて、センス良いですね。
着丼 ラーメン ヴィジアル良いですね! もちろん味もすごく美味しかったです!! 貝出汁も結構濃厚でアサリはもちろん心地よい、トッピングの鴨ローストうまっ!かった。 麺も細麺で食べやすい。
釜玉 いやーこれも美味しかったなーワサビが特に新鮮な感覚で美味しかった!確かにお茶漬け風にライス入れたくなる、、釜玉用ライスはちなみに売れ切れだった笑
割り箸に店舗名、わさび。 ラーメン屋をかれこれ200軒以上食べてきた中で、初めての経験だったので印象に残り自分の評価としてプラス要素になりました。

I was guided to my seat and noticed something unique— the restaurant’s name was engraved on the disposable chopsticks! It was my first time seeing this, and I thought it was a very stylish touch.

The visual was great! Of course, the taste was incredible too! The shellfish broth was quite rich, and the clams added a pleasant depth. The roasted duck was absolutely delicious. The thin noodles made it easy to eat.
Kamatama
Wow, this was amazing as well! The wasabi gave it a refreshing twist, which felt new and exciting. I totally understand why people would want to add rice to make it ochazuke-style. (By the way, they were sold out of rice for Kamatama, haha.)
Impression
The engraved chopsticks and the use of wasabi really stood out to me. After visiting over 200 ramen shops, this was my first time experiencing these details. It left a strong impression on me and definitely added to my positive rating...
