When I conducted research before visiting Tsuruga I found this restaurant. The website of this restaurant claims that it has 100 year of history and the founder learned his trade in a Germany for 6 years and was with the Chef of the Japanese Emperor. However the photos of the food on their website didn’t look appealing at all. Still I decided to have a try when I visited Tsuruga and I ordered their signature dish, the sauced katsudon. The taste of the food was actually better than what it looked. However the vinegar of the sauce was so strong that I felt like it penetrated my nose. To conclude, I don’t regret trying this restaurant but I definitely had had better sauced katsudon before.
P.S. the restaurant shows a commutative plate from Yoshirō Mori, the former Prime Minister of Japan. The plate writes “春風接人”, which means “to treat people with warmth and tender like the breeze in Spring”. However the whole phrase actually came from “以春風接人 以秋霜自粛” by Satō Issai, a Japanese Confucian scholar during the late Edō to Bakumatsu period. “以秋霜自粛” means “to treat yourself with strictness and modesty like the frost in Autumn”.
