Ideshoten is located at a prominent spot on the corner of Tanakaguchi intersection, about an 8-minute walk from JR Wakayama Station. This time, I visited Ideshoten at the request of a visitor from Canada. When we arrived at the restaurant, there was a line of about 35 people. We waited for about 35 minutes, and they took our order while we were in line.
We ordered the Special Chuka Soba (with extra char siu) and hayazushi. It had been a while since my last visit, but as soon as I took a sip of the soup, I realized that the strong pork bone smell we noticed outside was completely absent, and the flavor was very light. The char siu was thinly sliced but plentiful, with a melt-in-your-mouth texture that was delicious. The straight noodles had a nice firmness and a great texture.
The restaurant has only counter seats and was almost full when we visited around 8 PM. The atmosphere was that of a traditional ramen shop, bustling with local regulars and tourists. The ramen's flavor was a rich tonkotsu soy sauce, characterized by a slightly sweet soy sauce. The Special Chuka Soba, with its generous portion of char siu, was particularly satisfying.
We also tried Wakayama's specialty, hayazushi. The mackerel had a mild fishy taste typical of white fish, and the vinegar-flavored rice complemented it well. While the combination with ramen was unique, both were delicious when eaten separately.
The parking lot is close to the restaurant, located along the main road. There's a large sign, making it easy to find, but be careful not to mistake the monthly parking lot next to it for the restaurant's parking.
Ideshoten is famous for its Wakayama ramen, known as the "Ide style," representing the local ramen of Wakayama. This visit reaffirmed that the taste has remained consistent over the years, and I was very satisfied. When I visit Wakayama again, I definitely plan to stop by.
