An Authentic Filipino cusine can be found only in 1 restaurant in sabah which is the tambayan restaurant at api api center in kota kinabalu Sabah.. the restaurant is besides the proton showcase.
In the past which is 3 years ago, that is the 1st time that i have tasted the "sisiq" which is a Filipino delicacies that is made from mainly pig head meats with seasoned of salt, pepper, calmansi juice with onions and cili as well some chicken livers with topped up raw eggs over the sizzling plate..
Reading the Article on the history of "sisiq" really amazed me..Such rich history behind it since the era of the collonial and also with some medical properties towards it.
I am honoured to be able to dine the wonderful and historical "sisiq". Now comeback to the taste of it, by the smell and the "sizzling sound" really make the overall taste of it more coloured and deep..With the first bite, it is really good with the soury and spiciness of the meat with the taste of the raw eggs. The crispiness of the meat and the eggs really blend well..It increases my appettite most probably because of the freshness and sourness and spiciness of the sisiq..
Another dish that i have ordered is the roasted pork filipino special which tasted so good and having a unique taste that i did not find in any other chinese shop that usually serve same BBQ porks..maybe it is the sauce and the ways that they cook it make it so much tender and also rich in BBQ flavour taste and the richness of the sauce.
I orderd the last dishes which is the "Flan" , a delicacies of origin by the Roman and popularize by the Spaniard and the mexican make a much varities of the version of flan..Now all over the world are able to taste the wonderful delicate desserts. The sweetness of the caramel syrup with the softness and cheesy of the texture really blend well together creating the ultimate desserts of all time.
For all of the wonderful experiences in Tambayan, i gave 8/10 in view the decorations and the environment with customer services need to improved a bit more..4 star for this...

We ordered Set A (Pinakbet + Daing Bangus + Sinigang Baboy + 2 Rice), Set B (Chopsuey + Lechon Kawali + Tinolang Manok + 2 Rice), Sisig Pork, Tortang Talong, 1 additional rice, and some drinks. We are not big eaters so this was sufficient for us.
Set B was supposed to have "Sizz Kangkong", but they ran out of kangkong, which is why we had Chopsuey instead. The Sisig Pork and Tortang Talong were ala-carte orders.
Everything tasted good and everyone was happy. Highly...

Just this one thing after coming here a few times. The cook should be more professional/hygiene in handling food. Example, wash your hands after out for a puff when coming back and cook in the kitchen, wear a chef hat, hair net or cap and an apron. This would really boost up our appetite and confidence to come and dine in again...
