Let me preface by saying the place is reservation only. I completely missed that while looking for a place nearby to eat after arriving in Guadalajara for the 1st time. The owner Cesar, however, was very gracious and served my wife & I as walk-ins. But call ahead - I wouldn’t count on this happening and they may not be open. They only open when there’s a reservation. Also, this isn’t a 5 star review. If I could give it more than 5 stars I would. WOW! There are meals you simply never forget and this is definitely one of those meals. The entire dining experience is amazing. I’ve never visited a Michelin rated restaurant (a few Michelin guide places here & there) but I can’t imagine them being better than the food & attention my wife & I received from Cesar & his staff. He takes the time to explain the menu and when the food is served he gives a quick guide on how you should go about approaching your dishes. There’s only one entree option - carne en su jugo. It’s so deceptively simple, but this was genuinely one of the best meals I’ve ever had. You can choose your sides/accompaniments and we went with the largest entree size and the works for our sides. We don’t eat as much as we used to, so for us sharing the large was perfect. But man do I wish I had a bigger stomach because everything was out of this world. Please, I implore you, do yourself a favor and make sure you eat at Cesar’s restaurant; you will not be disappointed!!! (Just make sure you make a reservation first 😅)

Carnes en su jugo Mexicaltzingo are everything that the prior reviewers have said. So I feel like I am only adding to this traditional, late lunch, early dinner Guadalajara experience. The cut of meat is tough if not cut correctly but clearly the chef here knows a butcher. They provide an amazing piece that is braised to perfection with beans and spices and who knows what else. Two grandmothers provided this recipe and it is exactly everything you wish for in Mexican culinary arts handed down through the generations. This dish is lean, non-fatty, tender. Delicious! Easily enjoyed on a hot day despite it being soup. Just add fresh cilantro, onions, lemon and delicious, spicy salsa to taste and you will see the bottom of this dish before you know it. The warm tortillas perfectly compliment it. The guacamole is delicate and creamy beautifully complementing everything, especially the quesadillas and Chistorra. This sausage, Chistorra, is chorizo like but bumped up in terms of flavor and leanness of meat, perfectly grilled and served independently to be eaten either with tortillas in a taco or to be cut up and placed into the meat juice for added flavor. Cannot say enough about what a wonderful late lunch this was and again do make reservations! The restaurant is in a working class neighborhood just blocks south of where we were staying at in Americana neighborhood and absolutely enjoyable it and felt very safe. Do come and enjoy Mexicaltzingo!

Así que entramos a este restaurante que solo tiene 6 mesas y solo Cesar y su esposa Danielle trabajan para que puedan mantener la calidad, el servicio y la experiencia total en los más altos estándares. César explicó cómo funciona pedir Carnes en su Jugo y qué hacen los otros aperitivos para completar el perfil de sabor para una comida realmente satisfactoria. Me dijeron que comiera este plato exclusivo que viene de Guadalajara, así que elegí hacer todo lo posible e hizo la mejor y más increíble comida que he tenido en México en 2 años de estar aquí. El plato Carne estaba tan rico con el caldo y el tocino cubriendo la carne desmenuzada. Agregar las cebollas asadas, el cilantro, las cebollas blancas y la salsa roja. Era tan suave y rico en comida real y grasas en el plato. También tuvimos el Guacamole recién hecho y lo salamos en la mesa a la perfección. También tuvimos el plato de queso que estaba hirviendo en su pequeño plato. Luego también tuvimos la salchicha que se cortó en trozos y se agregó al jugo, pero también hice tacos increíbles. Tomamos un buen vino tinto y luego lo terminamos con el flan. He estado comiendo flan en todas partes para encontrar el mejor y este fue, con mucho, el mejor flan que he comido con caramelo y jarabe de chocolate. We had the cheese dish also which was bubbling hot in its little dish. Then we also had the sausage which was cut into pieces and added to the Juice but I also made awesome tacos. We had a nice red wine and then finished it with the flan. I have been eating flan everywhere to find the best and this was by far the best flan I have ever eaten with Caramel and chocolate syrup. The whole experience was probably the best we have had eating around Mexico. I could feel the love and passion that Cesar and Dany have when making the god and serving the customers. Ok por orden de calificación en la app realizo esta reseña. Cabe destacar que es necesario que cuando busques un restaurante nuevo (ya sea porque buscas algo nuevo, o porque simplemente no eres de la ciudad o país) es INDISPENSABLE que por lo menos veas las reseñas con las calificaciones más bajas! Así tendrás ambas partes, la gente que calificó de la manera más alta (poco realista para mi al menos) y las más bajas (resultados de una frustración TOTAL). Entonces como preámbulo y una invitación a cualquiera que lea esto: ANTES DE ELEGIR CONSUMIR EN UN NUEVO LUGAR, ASEGÚRATE QUE TENGAS TODA LA INFO NECESARIA, NO VAYA A SER QUE TE QUIERAN MANIPULAR CON IDEAS FICTICIAS! Califico con 1 estrella como resultado general, personalmente me llevo una pésima experiencia, se que no es responsabilidad del dueño del lugar este punto, pero la zona en la que te encuentras no es lo más acogedor de la colonia Americana, considerando que hay lugares más llamativos, esta es la zona "industrial" rodeada de fábricas, almacenes, etc. No es un espacio acogedor, y tampoco el negocio en si te invita a considerar consumir allí una vez teniéndolo en frente. Ahora con respecto a la comida, el mismo sujeto te invita inmediatamente (eso si, sin abrir si quiera la puerta de su negocio, una reja de metal macizo cerrada con llave, pareciera que tuviera secuestrado a todos esos comensales que cayeron en su trampa) a que busques otros lugares, no te da mucha información, parece un sujeto del norte y por experiencia propia, no puedes hablar mucho con personas así (con todo respeto a los norteños, pero son muy arrancones y él es el mejor ejemplo) si le preguntas cómo hace su comida, precios y demás (información BÁSICA) prácticamente te dice que hay otros restaurantes, claro que si sigues su juego pues probablemente acceda y te permita entrar, para que al final de cuentas descubras que su comida que te la vende como "gourmet" es prácticamente una venta de humo, te ofrece una agua celestial traída de los dioses, si no eres voluble te darás cuenta que estas dos cosas sencillamente no tienen sentido, además el menú (cosa que he visto en otros restos) no tiene mucha información, esto es común si se trata de una fondita, pero sencillamente no me imagino qué tamaño sería el platillo infantil si el mediano y chico parecen prácticamente lo mismo. Por otro lado ya mencioné el tema de servicio, pero aquí recalco que esta persona es prácticamente un acosador que desde un inicio está dispuesto a correrte de su negocio si cualquier cosa se sale de las manos, necesita en su negocio gente voluble, que no sea contestataria ni cuestione de ninguna manera sus productos, la calidad de ellos, o cómo están preparados, en cuanto vea algo semejante hará lo debido y te correrá de su local, independientemente de ello fregona tener mucha clientela pero en realidad cuando llegas al lugar (el cual es absurdamente pequeño) te das cuenta que simplemente hay a duras penas una mesa con una familia de 3 y tu, entonces ESTO es para ponerse a reflexionar. Finalmente el tema de la atmósfera que si bien, ya lo mencioné, no estás en la mejor zona, tampoco es el mejor negocio y si bien, el mismo dueño te dice casi gritando que existen otros negocios de carnes en su jugo, pues no es muy acogedor desde que llegas: un lugar cerrado al público, único acceso a través del dueño, pocos lugares para sentarse, de dimensiones reducidas, y que por ende es fácil de ensuciarse y mantener limpio, y con un dueño que te pisa los talones con todo tipo de artimañas para que cedas ante ellas y finalmente califiques en su negocio de Google con sus valiosas 5estrellitas Personalmente no vuelvo a ir, es horrible como existen personas así, que manipulan a las personas, y que aparte (porque si te das cuenta en calificaciones como estas) se pone al pedo con los mismo comensales que le califican mal HAHAHAHAHA No caigas en el fraude, investiga más, lo único que te puedo sugerir nuevo comensal, si es que llegaste hasta aquí, si como dice el mismo y mejor toma su palabra EXISTEN MÁS NEGOCIOS DE CARNES...
