Always on the hunt for new breakfast spots, my wife and I decided to check out this Manifesto location for our bi-weekly breakfast outing. The restaurant is located in a peaceful part of Colonia Mexico, surrounded by trees. The building itself is modern and stylish, with a koi pond and fountain at the entrance that sets a relaxing tone.
There is an indoor dining area and a pleasant outdoor patio. We weren’t sure about the mosquito situation, so we opted to sit inside. Menus were brought quickly, and our waitress returned right when we were ready to order.
The coffee menu includes the usual espresso based options as well as several cold brews and frappes. The breakfast menu is also fairly typical with egg dishes, waffles, and chilaquiles.
I ordered a large 16oz Americano espresso, which was probably the best coffee I’ve had in Mérida - very strong and full of flavor. My wife really enjoyed her cold brew as well. For breakfast, I had an omelet stuffed with serrano ham - excellent, though a sharper knife would’ve made it easier to cut. My wife enjoyed her chilaquiles.

My only issue was that it came with almost no ice and because it's 38 degrees outside by the time I took the third sip it was warm. I asked for some extra ice and they brought a small glass. I also had toast "confitado" grilled brioche type bread thick sliced with fresh mozzarella, sun dried tomatoes and arugula. It lacked balance and attention to detail. The bread was only grilled partially, which lead to soggy toast, especially with the thick slice. They put an enormous piece of fresh mozzarella on the side in addition to NINE slices on the toast, just way too much. It needed a vinaigrette or something to balance the flavor. Wonderful hard product. Coffee was wonderful. That's where the good stuff stops.
The servers are so overworked and the restaurant needs to double their manpower. Waited over an hour for avacado on toast then they only brought one and had to wait again for the second one we ordered. Asked for water about 4 times while waiting in the sun. Never came had to go get it myself. Ordered drinks that never came. Could hear all the other tables also complaining. They have one Barista when there should be 3 for the amount of people in the cafe. The food was average at best. Asked to speak the manager and he was too busy to even respond.
The owner needs to rethink their business model and only open half the tables if they don't have the staff. Really bad experience.
