As a born and raised Texan I feel qualified to review this establishment. I’ve never been to one in the States but was excited when they came here, thinking that I may be able to get a decent fried steak in Mérida. Sadly that’s not the case.
The positives are that the rolls and sweet butter that you get when you sit down are awesome. The free peanuts are a nice touch as well. The service is very good, the decor is typical US chain steakhouse but looks nice, they play country music (which is very uncommon here), and every once in a while the entire staff starts line dancing.
The negatives are the food. First we ordered the chili cheese fries. These were wedge cut fries with some kind of sweet meat sauce on them (and a little cheese and bacon). It had been under a broiler for too long so the cheese was baked on the plate. The ‘chili’ was just weird with what appeared to be meatballs in it. The wedge cut fries were not crispy so they were soggy in the weird ‘chili’. Would some onions and jalapeños have been too much to ask for a 153 peso appetizer? We then ordered the country fried chicken and steak (what we call chicken fried in Texas), a Caesar salad, mashed potatoes and corn. They didn’t bring the steak but instead two orders of the chicken. The potatoes were good - creamy and had a good consistency. The corn was just reheated canned corn. The Caesar salad was your typical chain restaurant salad. The chicken itself was well battered, the batter was thin and crispy, but a little dry due to the thinness of the patty. But the worst part was the cream gravy. It was SWEET. WHY WOULD YOU ADD SUGAR TO CREAM GRAVY?!?! It made the meal basically inedible. I sincerely believe that Texas Roadhouse owes an apology to the great State of Texas for using their name and then serving that travesty of a dish.
I looked at other peoples dishes to see if there was anything else appetizing there. The burgers looked underwhelming and the ribs looked like they had that sickly sweet sauce that Yankees (not Texans) put on their ribs. Maybe the steaks are good but for the prices they’re asking go to La Rueda, Trotters, Sonoma Grill or 130C.

The bread is excellent, but I'd recommend asking for regular butter instead.. the cinnamon + sweetness was strange for me. When my steak arrived, the waiter verifys its cooked to your liking.. the service goes the extra mile to ensure you're happy with what you've ordered. The ribs were pretty good, not the best I've ever had. Steak wise, the sirloin is a decent cut. For sides, I'd recommend the chili. Pass on the chamote puree (sweet potato), it was also really weird for me to have a side that sweet and cinnamony. They were quick to replace with fries, those were really good and paired nicely with the chili. For dessert I had the brownie, seemed homemade. Was good. Not the best brownie I've had in my life but pretty good. Needs more of a chocolate flavor, also the ice cream was a bit grainy with ice crystals. I'd try a different dessert if I go back, or skip it altogether as it was a fat boy portion of food for the main dish.
Definitely note to yourself when you want to eat there because ...you need to be prepared to wait. The place is a zoo, insanely busy and loud. I bet if the restaurant was doubled in size, it would still be full most of the time.
Go when they've just opened and you should be good. Arrive at 2pm and you'll likely wait an hour.

The wait was not so great
The labor utilization is very poor at this facility to the point of over saturation... lots of Texas Roadhouse t-shirts standing around waiting to do a line dance and not much else in between with a full house and people outside waiting in line. We sat at the bar and did not have to wait more than ten minutes to be seated but we counted 8 or 9 people behind the bar doing alot of avoiding doing something productive.....red shirt I assume is a manager of some kind was too busy following closely and giggling with a waitress to even notice there were customers in the restaurant. Turning tables faster and reducing labor would result in a better customer experience. 9 people within 3 meters of us and it was 30 minutes before the food order was sent to the kitchen.
