The experience is excellent in some regards and not the best in others.
Service- excellent Waitstaff- excellent Wine- good-excellent Ambiance- excellent
Food- ok Vegetarian options- not great Is it worth it? Not especially, and if you're vegetarian definitely not.
A couple things for me that would have made it worth: 1) the vegetarian meal should be at least 2/3 the cost of the meat meal based on what is served. 2) the "single bite"/spoonful courses should be a life altering experience, a bite that I remember for years to come. They were mostly unremarkable. 3) if you're going to call yourself fine dining you need to use the finest ingredients. Serving me a meat bite made of chuck or sirloin, unless that is Wagyu, there's only so much you can do to improve the meat itself. Some of the vegetarian alternatives were not even close to the same level/quality but was still the same price as I mentioned.
I think there is a lot that Koli does right. It was a great experience, great location, and great employees who indulged me by doing their best to speak English. They need to do a bit more to improve the experience of what comes out of the kitchen to make it more unique and memorable.
The shrimp, the piglet rib, the crusty ❄️ (can't remember the name sorry), the barbecoa and sirloin bites and the salad were all very good and/or interesting which was about half of the dishes the others were kind of disappointing. Read moreI really wanted to love it, but it was a mess, left us with the sense of never returning. Unfortunately the stars shouldn't rate effort and self esteem, or we would be rating a five star.
They believe they are a 3 Michelin Star restaurant and charge as if they were one, when they are a -2 star on the reality.
The food wanted to show us how well the chef is aware of culinary techniques used around the world, rather than make us enjoy delicious, unique food, so five stars for those techniques! 38% of the food was enjoyable, 20% was dreadful.
My digestive system also wants to participate, it wants to give the food 5 stars for taking me so far away from a constipated state during the following day.
An ultra 5-star rating on giving us material for conversation on our table with 20+ interruptions with bizarre back stories about the food and drink, that according to an informal average stat we agreed to, where 29% comprehensible.
I should also be giving them five stars for really trying to make me make new friends, which I might be in need of, but the couple sitting just 50cm away from us during dinner didn't take my sarcastic remarks with joy.

Read moreThis is such a gem! One of two Michelin Star restaurants in MTY and it's definitely one of the better ones I've been to. Definitely beats out places like Alcalde (GDL), Esquina Común (CDMX), and Pujol (CDMX) for me. I think it's quite different from Pangea as well, which is neither good nor bad. There's definitely a lot more reference to local cuisine and I think the menu is more innovative/tries to play with new tech and ingredients. The desserts and apps they served were the standouts for me. The actual restaurant is also a much more intimate, quiet space vs. Pangea which was quite big and loud.
A big plus for me was there extensive options for pairings with the meal; my partner doesn't drink alcohol and it's one of the few menus I've seen with a dedicated non-alcoholic drink pairing, and they had 4 different types of alcohol based pairings you could choose from (cocktail, spirit-based, wine, and premium wines).
Some small downsides would be some odder serving decisions and some small miscommunications. There were some small mistakes made based on assuming what we meant rather than going by what was actually said/requested in the reservation. Nothing big though and I would 100% recommend eating here if...
