You can order at the counter or sit and wait for the waiter.

The agua fresca stand is a separate business but will take care of you. Just ask.

Again, this is a very busy establishment on the weekends but do not let that scare you, it is well worth the wait. (About 15 to 25 minutes in a busy day)

Cemitas Las Poblanitas (antiguamente La Poblana del Carmen) es un establecimiento especializado en el típico bocadillo poblano homónimo. Ubicado dentro del Mercado del Carmen en la zona sur del Centro Histórico de la ciudad de Puebla. El lugar cuenta con acceso por el interior del mercado en la zona de alimentos, y por el exterior sobre Avenida 21 Oriente. Dando servicio en múltiples locales comunicados entre sí. Llegas y lo primero que notas es la gran afluencia de personas. Notoria por la larga fila que hay tanto para ordenar para llevar, como para esperar mesa. Dependiendo de que tan concurrido este el tiempo de espera puede llegar a elevarse considerablemente, tanto para ser atendido como para recibir tus cemitas. El servicio de los muchachos cumple, pero se ven rebasados por el alto número de comensales que acuden al lugar. Los verás llendo y viniendo todo el tiempo, siendo necesario incluso llamarlos para recordarles elementos faltantes de tu orden. El platillo es una cemita tradicional poblana. Milanesa, jamón, aguacate, quesillo y chipotle en abundante cantidad, dentro del característico pan que da nombre al bocadillo. Complementados con los encurtidos (coliflor, zanahoria, jalapeños, chipotles y cebolla) y el papalo, que son proporcionados como servicio de mesa. El sabor es bueno, algunos mencionan que antes era mejor, pero el conjunto global sigue siendo notable. Una visita obligada para cualquier visitante y oriundo de la ciudad. Eso sí, de ninguna manera me parecen las mejores de la ciudad, en forma personal esas serían las Cemitas Lupita del Mercado de la Diagonal Defensores de la República. Cemitas are a staple of this State's cuisine and Las Poblanitas is one of the most famous places to go when cemitas is what you want. It had been a while since I visited this venue and I was pleasantly surprised by the quality of the food, while it is in a market (you can't expect a lot of comfort when in a market), it was a very enjoyable meal.
