This is the latest incarnation of the former Chinicuil restaurant, which I never had a chance to try since it had to close due to the Covid lockdown. But Chef Alan has been able to establish a new version of that restaurant, under the name Techol, and without a doubt, I believe it is Querétaro’s best restaurant, and it matches or exceeds high-end cuisine I’ve had in places like Oaxaca or Chicago.
The menu is “nouveau Mexican,” with classic dishes reinterpreted with imaginative and fresh ingredients. The current menu showcases main dishes like grilled octopus, tuna steak, and mole de olla, as well as starters like ceviche verde (a Chinicuil classic) and various versions of classic tacos like chamorro pibil and suadero. For vegetarians, the roasted beet salad is a must-try. And if you go for dessert, do not miss the buttered sweet plantains with goat cheese and crème fraiche! And I almost forgot: there’s an extensive list of cocktails as well.

Read moreCelebrated our 33rd anniversary at Techol last night. A truly outstanding meal and experience. Started with the sangria Techolero with mezcal. Had the salmon appetizer which was very tasty. There were three of us and the main courses we had were the Mole Rosa with quail, robalo and shrimp. All 3 dishes were outstanding and unique. The kind of meal you eat slowly because you don’t want it to end. Finished off the meal with carajillos and shared the plantain and arroz con leche desserts.
