Excellent concept of Dutch only ingredients, really worked out to make really creative choices. This goes from the table linen to the excellent cooking. Especially the non-alcoholic pairings with dishes was very special and very, very recommended. In general, wine pairings were excellent too. If you eat here, definitely take either pairing, you will be amazed at the quality of the (Dutch!) wines and drinks. Lots of different styles of fermentation on offer. Service was friendly and infinitely more relaxed than the often worn down staff you see in other fine dining establishments. These guys look like they're having fun doing what they're doing
Giving 5 stars for the potential, some flavours and dishes aren't yet refined enough to warrant the price point in my opinion (eg. Field pea cracker tasted basically of field pea and wasn't super elevated, red beet jelly with horseradish was very beetroot-y and could have worked better with less of the jelly on the plate etc.), and it's closer to 4 stars for me as a current experience. For this price point, dishes could be a little more balanced (some dishes were very one - admittedly delicious - note), service could be a little bit better (serving staff couldn't always talk authoritatively about the dish, wine pairing sometimes brought out a little later than the dish), and generally the details could use slight upgrades (eg. potato dish was hard to slice effectively with provided tools, plates were often a little small with little room to maneuver for slicing and portioning the food, had to request a spoon for certain dishes). They're all little things, but I think the restaurant has Michelin aspirations and isn't quite there yet. Read moreAbsolutely delicious. This was a great experience that I can recommend to both couples and groups. We had a wonderful time at Neder. From the moment we walked in the door, the sheer passion for the project was clear from every member of staff we encountered at our table. The attention to detail, expertly crafted compliment of flavours, steadfast commitment to local produce, pacing of the service, and the excellent wine parings, all make Neder a must visit.
One thing that sets Neder apart is the attitude and demeanour of the front of house team. In many fine dining establishments around the world, there can be a slightly unpleasant arrogance and snobbishness to the atmosphere. The attitude often feels "we are here to show you that you know nothing about food". At Neder, the atmosphere is not only warm, welcoming, and unpretentious, but the vibe is "we want to share our knowledge and passion for the food that the nature around us provides". You go away feeling that good locally sourced food is not out of reach and we do not need to rely on mass produced imports. This really does set Neder apart from other restaurants of it's kind.
My only comment that I would add is that the beer selection is rather limited. While there is a great selection of wines, jenever, whisky, an non-alcoholic drinks, I think having more than just one beer on the menu could improve the experience for those with tastes leaning in that direction. That said, the wine pairing was fantastic and I discovered two wines that I enjoy and was not familiar with before.

Read moreNeder received a Michelin nomination Sept 18th and (update) just was awarded the Green designation. They deserve it. Foodies in Amsterdam owe it to themselves to visit. I came from Seattle, Washington US. What distinguishes Neder is the chemistry - even Alchemy - of the Nederlands and the Ponder sourced ingredients. The first aperitif was distilled essence of conifers. A beautiful palette cleanser. Then there was the distilled young pinecone essence in a later dish. There were the large caramelized roasted garlic from the upper polder, and the micro “French onion soup” made with rich broth and the oil from 25 year old cheese. The flavors I enjoyed were ones I have never enjoyed before and can’t describe - and I won’t have again until I return. Neder’s true farm to table experience is one of the top ten dining experiences I’ve had over the last 30 years - including many 3 star Michelin restaurants across the world.
