Been to Saigon last Jan 2023 for a food trip and while it may not 100% capture the real deal, I'd say the beef pho we ordered was still good on its own merits. On my first sip of the broth, it reminded me a little bit of "nilaga" taste (perhaps to cater Pinoy palate).
Fried spring rolls were also good and taste is amplified once dipped on the sauce that comes with it.
Vietnamese coffee was super strong but mixing it with condensed milk will somehow mellow it down (wc we prefer).
Carrot walnut cake was decent. It's moist and serving size was pretty generous but I can't find a wow factor for each bite.

The staff were talking amongst themselves as a group in the front while looking at us (very awkward and totally unprofessional!). They said the spring rolls were out of stock, which is a huge red flag! This means they don't make them fresh on order, and it's been probably pre-prepared hours ago. We left immediately.
