I have to say, I was expecting so much more from this place after I heard Italian voices entering the restaurant. We ordered two pizzas and some drinks of the brand Galvanina. We know this brand very well from our trips to Italy, but to be honest the prices here for it were simply too high. In other places in Warsaw this drink is usually between 11 to 13zł and that's a comparable price to Italy, where I am used to pay for it 2,5-3 Euro even in some fancy places like Culinaria Firenze. As it comes to the pizzas, neither the dough nor the pomodoro sauce did not impress me. Whats more, they were also to some extent, but for sure less than the drinks, overpriced for what they delivered. The sauce did not have the depth and intensity. The dough did not have the taste that comes from burning wood as the oven is not this type, and sadly I didn't like the texture - which I suppose is the result of lower oven temperature that can be reached. There are some other places even in Warsaw (but to be honest very few), where the taste of the pizza (especially sauce) is as if you were in Italy. Before I visited this place, I had great hopes that this would be another one. Nonetheless I wish the owner very best, but because of the reasons named above, I won't be a recurring customer.
EDIT 19.09.2020 Dear Mr Saccomani, First of all thank you for your reply. In this regard the quality of communication that you as the owner provide is superior over any other Warsaw restaurant. My review of your restaurant is my opinion and the base of it is my personal taste and experience that I gathered visiting other restaurants in Poland as well as in Italy and other countries. The dough you make, as I stated in my previous part of the review, is not the style I like. However I would like to mention that there are some quite different styles of dough that I like that are present in different regions of Italy. The dough in your restaurant reminds me of the pizzas that I ate in Torino. Nevertheless they were made mostly in wood-fired ovens. Every time I visit Italy I have a long list of restaurants and pasticcerias that I am going to visit. Most of them are pizzerias, but not only. I use different sources to find the places that provide the best taste. Taste is the thing I care most about when it comes to restaurants. Gambero Rosso guide is a good base, but it is of course not enough. Sometimes I visit Michelin star-awarded restaurants but it is also not always a good choice when it comes to taste. I found some true gems thank to local people - these places are often on the borders of the cities or even in the middle of nowhere as it was the case in Sardenga. But to make one thing clear, almost all pizzas in places I visit are made in wood-fired ovens. As you know, Associazione Verace Pizza Napoletana does not even allow other types of ovens than wood-fired. Therefore I can't agree with you that top Italian pizza makers use electrical ovens. And that is now not my opinion, it is a fact. I am aware of the differences in taste that occur when burning different kinds of wood. You mentioned the tree bark, that might release some toxic fumes. I agree, and I am aware of that, but the temperature in the oven plays a very important role. If it is sufficient high the problem is less important. When it comes to wood humidity I completely agree with you - in most cases it is too short dried-out and when it is dried-out then it is too expensive. EDIT RESPONSE to MR ENZO : Dear Sir, thank you very much for the exhaustive response. Responding to your arguments: 16 types of pizza - that's fair, I also prefer that number of positions in card is limited, however in this case I found many pizzas so similar to each other that it felt to me that I can choose between 2-3 pizzas. cold food - sorry but if you wait 40 minutes for pizza when you're hungry and when you finally get it, you really don't want to place a complaint about it and wait even more. You just eat colder pizza, however it shouldn't be a case in a good restaurant. not polite service - the waiter asked us if we want to seat outside and we said yes, he came back after 5 mins and said that we cannot sit outside and we got the table inside. He couldn't explain well why can't we sit outside where is much nicer to seat. Maybe it was a language barrier, but if not in polish, we all speak english so it would be nice to say for example "I'm very sorry but I didn't know that the table outside I was about to offer you has a reservation". It was just "go sit there" and afterwards he wasn't really nice to use when taking an order. I love Italy and italian culture - spent many holidays there and surely it wasn't "italian hospitality". Read moreI had a pasta dish with mushrooms and sausage. My imagination was enticed by the description but once the dish arrived it was underwhelming to say the least. The sausage and mushrooms were minced. I was expecting a piece of sausage and actual cut pieces of mushrooms.
The taste was ok but honestly I make better pasta at home. I was actually hungry when I came to the restaurant but I assume the chef views his food as gourmet and not average thus serving undersized portions. When I finished, I regretted not ordering a pizza, perhaps it would have been better.
The sausage was borderline ground beef, nice way to cover up how little of it there was. Like I said you consider your food gourmet hence the small portion yet I disagree with the flavor and presentation to be average. Honestly I can’t remember the last time I left a restaurant still hungry, but a Vapiano’s meal, which is a chain Italian place, would have been much better tasting and with actually recognizable ingredients. Indian, Thai, Vietnamese, Georgian…cuisine I enjoy in Warsaw, never left any of those places hungry and “Polish portions” are actually not too big unless you go to someone’s house for dinner.
