I booked a table for 13:15. Due to traffic, I arrived at 13:30, only to be told that my table had been given away with no communication. I was then offered a table outside in this freezing weather, even though I had a special needs child with me. Why bother taking bookings if you do not have the skills to manage bookings? If possible I would have given 0 stars. Do not bother going to Origami unless you want to eat sitting in the icy wind.

I arrived at exactly 13:30. There was already a family sitting at the table that I had reserved (the table was pointed out to me by the waiter), and they had already placed their order. I seriously doubt this could have been accomplished in 60 seconds.
Your establishment may have a standard policy of holding a table for 15 minutes, however, I seriously doubt that this is the industry standard. Moreover, this was not communicated to me when confirming the reservation, nor is is mentioned on any of your social media platforms.
You are in the SERVICE industry, not your customers. As such you should provide a complete service, including contacting your customers who have made a reservation but are late for it. The excuse of being busy does not hold any weight if front of house is doing their job in a professional and efficient manner.

If a customer has a complaint, it is your job to find a solution and rectify any problems pointed out. You placate the customer to ensure that they return and recommend your establishment.
