It is amazing that the chef has such passion for what he does that he so carefully grills each piece of pork, while using meticulously cut pieces of lard to oil the grill and cook the meat. He also recommends the condiment for each cut, to better appreciate the flavour. The textures of the different cuts were interesting and the side dishes and other accompaniments were good too.
