As a highlight for unforgettable dining experiences in JW Marriott Jeju, Ladies and Gentlemen, please welcome Flying Hog and his Bulgari Dinner!

The Executive Chef, Joon Ko is ready to guide us to his journey of flavors with local ingredients, fire-out oldest cooking technique with wood fire and his passion on cuisine. This time, he coolaborates with Bulgari.

The handsome Sommelier, David Joo, presents well-selected wine pairing (3 at 80K or 4 glasses at 12K KRW) in harmoney with Chef's each cuisine.

The journey of flavors (Bulgari Dinner ar 150K) by the executive Chef starts with:

Amuse bouche Ceviche with Jeju Cuttlefish & Melon Duck w. Cauliflower Hairtail fish w. Leaves Hanwoo 1++ Chodang corn Sorbet, blood orange Flying hog - Jeju black pork Cheese souffle, Vanilla Petit Four

Using seasonal and local ingredients, the long journey (takes around 2 hours) was diversifying with good tempo and curiosity on the next dish. Each dish is creative with confidence by the Chef. The seasonal local cuttlefish is unique and good appetizer. Especially, the flavors and aroma created from 1000 degree woodfires is one of a kind! Duck and pork cuisines are the ones with crispy skin. The steak is exquisite and matches well with Ricotta cheese and Chodang corn. The hairtail is a little fishy and greasy for me, but I wish it was baked a bit crispy or used a different sauce.

In general, it is wonderful experience with fabulous sunset view with good values for the money. (At first, I thought it was a little bit expensive, but after having dinner, it's not a waste to pay twice as much in Seoul.) Especially thanks to Sue and Minsang for their top notch service. I rarely use the word exceptional, cause I want to really mean it when I say it. I think it fits really well to describe everything about this place.

Such great and friendly staff, explaining everything about the menu with care and enthusiasm.

The food is a wonderful experience overall. With super fresh and flavourful ingredients and ingenious ways of using them. I really enjoyed every single dish of the course menu. And everything really represents Jeju faithfully. The dessert is to die for, we even had seconds!!

The wine pairing was also excellent and elevated the experience even more. Great selection of wines that went very well with the food.

I would not be surprised if this place gets a Michelin star in the near future. Really deserves it. I’m really looking forward ro...
