We happened upon Pagus and were very happy with the service and food. As travellers through the area, we try to communicate as much as possible in Spanish but we aren’t fluent. While some restaurants have been very rude (sometimes outright ignoring us), the staff at Pagus went above and beyond to make us feel welcome.
The food was amazing (and I don’t use that word flippantly). Simply put, it’s the freshest of ingredients prepared perfectly.
Olives: I will never preface this by saying I’m from Canada and we can’t get fresh olives there but these were the most flavourful and delicious olives I’ve eaten.
Beef carpaccio: this was prepared sprinkled with fois gras and balsamic. It was next level. We’ve eaten at many top-ranking restaurants around the world and this would rank in my top 5 favourite dishes.
Pasta and steak: The freshly made pasta and steak dishes were also everything you’d hope for.

The focaccia starter was delicious with excellent cured meats. The lamb ravioli had an great filling with paper thing pasta and a classic rich butter sauce. The troife with truffle was also fantastic, the truffle wasn’t overpowering and the flavours were great. A good tiramisu for dessert.

I had the maccheroni with n'duja sausage, the waiter warned me it would be spicy but I disregarded his warning because normally I love spicy food. He was right, it was burn-your-mouth off hot but the flavor was good. They offered to replace it with something else but my daughter had the spaghetti alla Carbonara which was so delicious and such a generous portion we just split that.
