Humos gastrobar — Restaurant in Madrid

At the end of our trip through Spain we flew back to Madrid the day before our return to Chicago. Decided to stay near the airport and went to explore a restaurant at walking distance from our hotel. And we discoveedr HUMOS gastrobar. What a place! Brand new (4 months since opening) and it is a gem in the local neighborhood. Very inviting and charming atmosphere and kind and attentive service; we knew it was going to be good. Well, it was great! The selective menu showed solid options. Our starter (Rueda Gratinada) was light and tasty and enough to share. But the real show stopper was the Lomo Bajo. WOW. Cooked to perfection with the best guarnicion of tasty patatas and to make it perfect, an inspired Chimichurri Argentinian sauce that on its own was incredible. They should mark it and sell it by the ounce! I have lived in Mexico City, Denver, Omaha and Chicago and have visited many latin cities...Humos' chimichurri is TOP 5 for sure. Tucked in a nice neighborhood not far from the airport, we were looking for as much of Madrid as one can get from a layover by the airport. Humos gastro bar was everything we had hoped. We had blistered carrots with hazelnut pesto and herbed cream cheese to start. We shared grilled octopus with more pesto and also steak with herbed potatoes. For dessert, a crepe with house-made caramel and panna cotta with fruit. Both the grill and oven are heated with wood or charcoal, and beer/wine was available to pair with the food. We stumbled upon this place because it was near our hotel. We arrived early to dinner but we were welcomed and greeted nicely. After the kitchen was open around 8pm we ordered the grilled vegetable salad as a starter. It was delicious, the bread was nice and fresh, perfect. Then we ordered the octopus. It was absolutely breathtaking! Super fresh, perfectly cooked. The pesto and potatoes were a great match to the whole dish. Absolutely fantastic experience. Great service for an acceptable price.
