The restaurant is on the ground floor of a tall building in a quieter neighborhood in Madrid with a tiny park in front and a very laid back vibe. We arrived before service was open and was seated as soon as they were ready but it didn't take long before the place filled up. Our server was super attentive and helpful even though they were pretty busy and gave us a ton of help with the menu and also told us about a couple of off the menu specials so be sure to ask for those! We got a bottle of wine based on his recommendation which we really enjoyed and also got a little intro to pouring etiquette in Spain which we really appreciated! The amuse bouche were great and we wanted to try everything on the menu. Some of the highlights included the tomato with fermented honey, the crispy skin pork belly, the leek, the baby squid and the beef rib with tortilla. Read moreMy wife and I made a reservation in advance for our last evening in Madrid. Since we arrived a little early, the chef came out to us and offered us a drink while we sat outside. The waiter was professional, smiling and very sympathetic and asked us if we were very hungry. When we said no, he offered us the short tasting menu (6 dishes) and this gesture in itself was very nice. And most importantly, the food was flawless, delicious and creative and each dish was better than the last. In addition to the menu, we got an anappetizer of two small glasses of wonderful gazpacho with pate on the side, and homemade bread.The organic dry white wine, Verdejo de Menade was also great. Very different taste profile from the understated nordic style in my home town, very Spanish, with much bolder tastes, difficult yet to appreciate which parts are traditional and which innovative. I had the short tasting menu and the very first dish 'gilda' has such a strong taste combination that I felt a bit shellshocked. The main dishes felt very rich, might enjoy them even more in the winter season. The pace of service could be a little slower to allow for better appreciation. I had the starter and first three dishes in 15 minutes, had another 15 minutes to myself, and then the rest of the food arrived in the next 15 minutes.
