I have now visited Subtil on several occasions, and always walk out with a smile on my face! Gaetan has really gone all in! They started serving only lighter nibbles such as cheese to accompany their organic and biodynamic wines, they now serve more substantial plates. One of my favorites is the “lubina” tartar, I would say it is a must if you have not tried it yet. I can rave on about the taste of other dishes, but it´s more fun to do this culinary exploration yourself. One of the things I also love is that many of the food products are locally sourced. Apart from being ecological, this also entails a reduced logistics chain, always positive for the environment. After having discovered they also serve breakfast here, I felt that this was also something I needed to try. Coffee is more northern European in taste, and the bread, Manchego and Iberian ham I had was delicious. Orange juice is provided freshly pressed from local produce. If you are brave, you will also try one of Gaetan’s specials, a ginger shot! For me, it was a bit strong for breakfast, even though it is supposedly very healthy. Decoration inside is very tasteful, everything is laid out around the prominent transparent wine cellar. Should there not be enough room for you to sit down, I assure you the bathroom is also spotless, you can eat in there! Subtil has even managed to make a cozy space outside, while location is not ideal, they have definitely made the most of it. Service is perfect, Gaetan and his staff are very knowledgeable, and it is a pleasure to learn more about the biodynamical and ecological produce they serve and sell. We had the pleasure of dining at Subtil Wine Bar & Artisanal Products — and what a delight it was. From the moment we stepped into the beautifully styled and thoughtfully curated space, we knew we were in for something special.

My wife and I enjoyed a series of truly delicious courses, each prepared with care and creativity. Everything tasted fresh, balanced, and full of character — a true celebration of seasonal, local ingredients.

We met friends for early evening predinner drinks. Set in the Elviria commercial centre, it's a small and beautifully decorated place with two casual seating areas, as well as dining tables. Their speciality wine collection is also housed in glass and the places oozes quality. The Yum: We only wanted a small appetiser and treated ourselves to caviar and some 16 month Comite French cheese. Caviar was served beautifully in ice with delicious thin freshly made toasts and the cheese on a board. Both were off the scale yummy! The Fizz: We tried one of the white natural wines which were recommended but as it wasn't to our taste, we opted for a bottle of dry Moscatel and a glass of red Sietejuntos. Both absolutely excellent. The Rest: Perhaps the highlight of this place is the obvious total dedication that the staff have to sublime service.
