Durch bisherige Impressionen und Bewertungen haben auch wir dieses Restaurant aufgesucht. Nettes, modernes Ambiente, freundlicher Service, mehrsprachig, hätte aber etwas aktiver sein können, nicht nur auf Zuruf. Menüauswahl sehr kreativ, Fusion als Oberbegriff, teilweise etwas überfordernd aber trotzdem für alle etwas dabei. Fisch, Fleisch, kalt, warm, vegetarisch, da sollte jeder was finden. Ich hatte das Lachstartar als Vorspeise und Lamm als Hauptspeise und möchte dementsprechend nur diese Auswahl bewerten. Das Tartar war bereits mariniert und sehr grob geschnitten, keine Kritik, nur Feststellung. Um das Tartar waren noch mehrere Saucen verteilt, auf dem Tartar zudem noch eine Kugel Apfelsorbet(sehr lecker) und frittierte Karottenstreifen. Sehr schön angerichtet, modern interpretiert, was für das Auge. Dadurch, dass der Lachs bereits mariniert war , war es sehr schwierig ihn überhaupt heraus zu schmecken. Diese Vielzahl an Saucen und Geschmäckern bildete für mich leider keine Einheit. Alles für sich, schmeckte gut , aber wenn ich so viele Saucen und Toppings zusätzlich zum bereits marinierten Hauptprodukt anbiete und mit anrichte , sollten diese Aromen sich im besten Fall ergänzen und das Hauptprodukt in Szene setzen und unterstützen. Hier war mein Gaumen schlicht überfordert. Jenachdem welche Sauce ich mit dem Tartar kombinierte schmeckte es eben nach dieser Sauce bzw. Nach einer Mischung der Marinade und der Sauce, dann in Kombination mit dem Apfelsorbet vermischte sich alles im Mund und war ein einziges Durcheinander aus Vorspeise, Hauptgang und Nachspeise. Dazu natürlich alles sehr kalt. Hier wäre weniger wahrscheinlich mehr gewesen. Klare Aromen, die Einzeln deutlich zu erkennen sind, die einzeln oder in Kombination dazu Sinn ergeben und vllt eher ein Apfelschaum der den ohnehin schon kalten Lachs nicht noch mehr abkühlt und ihn dadurch noch unauffälliger macht. Die einzelnen Produkte waren wirklich toll und auch fachlich gut zubereitet, die hier gewollte Fusion fand für mich leider nicht statt. Wäre toll wenn ihr hier euer Gericht nochmal überdenkt und reduziert.

Zum Lamm. Aus der Beschreibung im Menü hätte ich vieles erwartet, nur nicht das! ( und auch der zweite Gast am Tisch , der das Lamm gewählt hatte , hatte etwas anderes im Sinn) Aber das möchte ich nicht kritisieren, einen Überraschungseffekt gab es auf jeden Fall. Statt einem Stück Lammfleisch mit knusprigem Basilikumpesto, welches mit gegrilltem Gemüse serviert wurde , war das Lamm nicht am Stück sondern gehackt und quadratisch geformt, grober als Burgerfleisch , eher so wie Pulled Pork mit Knusperdeckel. Interessant, aber, erstmal gewöhnungsbedürftig, vor allem wenn man mit einem Stück Fleisch rechnet. Hier hätte eine genauere Beschreibung im Menü wahrscheinlich zu einer anderen Wahl des Dinners geführt. Aber nun gut. Zur Umsetzung. Wieder sehr schön angerichtet, was für das Auge. Fleisch sehr weich, vorher wahrscheinlich geschmort und dann gehackt und neu geformt. Ziemlich kräftiger Lamm Geschmack, etwas zu viel für meinen Geschmack. Welcher Teil des Lamms hier verarbeitet wurde lies sich leider nicht mehr erkennen. Pesto war unauffällig, es fehlte insgesamt das Salz. Auf dem Pesto waren noch frittierte Kartoffelstreifen, diese hätte es nicht gebraucht, waren weder Ergänzung noch Beilage. Ich hatte so meine Probleme mit dem „Mundgefühl“ dieses geschmorten Lamm-Tartars, es fühlte sich irgendwie komisch an. Geschmacklich ergänzten sich hier das Fleisch mit dem Pesto einfach zu wenig, da würde ich mir mehr Mut wünschen, vllt mit einer süßen oder pikanten Sauce?! Als Beilagen gab es zweierlei Kartoffelpüree in verschiedenen Farben und Geschmäckern, beides lecker. Das gegrillte Gemüse, naja war teilweise zu roh und es fehlte der letzte Pfiff. Nichts besonderes. Wenig Grill -Geschmack.

Alles in Allem: Weniger ist mehr! Schönes Lokal. Tolle Produkte und eine Küche mit viel Talent was die Umsetzung der Produkte angeht. Jedoch war es mir einfach zu viel durcheinander auf dem Teller und im Mund.

We enjoyed a light lunch today, really happy with every aspect of the experience. The tuna nigiri was standout, for me, the gyoza was also delicious. Prawn tempura was a little too heavy on the tempura for my taste, but my husband thoroughly enjoyed and the satay sauce was very flavourful. However, what made the experience particularly enjoyable was the exceptional service from Jose - his recommendations were truly appreciated, as was his warm and genuine service. You are very lucky to have such a dedicated manager, who takes such great interest in the food he is serving and goes that extra mile to offer a great customer experience. Thank you, we will...

The sangria was really lovely and light. To eat we had the crispy bread with tomato topping and the carrot and sweet potato hummus. Then for the main we have the langoustine tempura roll which was a really tasty and very big portion (we could have shared instead of ordering 2). Overall the food was very light and fresh and the service was excellent. Would say a little on the pricey side for lunch at €100 however we probably ordered too much. The sangria was really lovely and light. To eat we had the crispy bread with tomato topping and the carrot and sweet potato hummus. Then for the main we have the langoustine tempura roll which was a really tasty and very big portion (we could have shared instead of ordering 2). Overall the food was very light and fresh and the service was excellent. Would say a little on the pricey side for lunch at €100 however we probably ordered too much. We discovered ABBACO one lunchtime & decided to book an evening meal there, the food was so good that we went back to the restaurant on our final night last Wednesday 16th April 2025. Again the food was excellent. It is a premium establishment & well worth the extra costs with a varied menu to suit all tastes. The staff we met CATI and JOSE were very professional & made us feel special. John & myself would recommend ABBACO, we have been coming to Pollença for the past 4 years on a training/social basis & ABBACO will definitely be added to our restaurant of choice.
